Being served in the French Market at the 4th Annual Roadfood Festival will be some of the earth's most delicious gumbo, made by Prejean's of Lafayette, the Cajun capital of Louisiana. Gumbo just may be the quintessential melting pot dish, a gallimaufry that reflects the cooking of Spain, West Africa, France, and Native American Choctaws. Too bad we don't have a way to upload the aroma wafting up from this bowlful. It is intoxicating.
