Thanks to Hank Williams' lyrics in Jambalaya (on the Bayou), crawfish pie is probably better-known than meat pie, but both are long-time specialties of Louisiana, the former more popular in southern swampland, the latter a signature of northern Cane River country. You'll be able to taste both at the 2012 New Orleans Roadfood Festival, to which Lasyone's restaurant will be returning by popular demand. Talk about a true taste of Louisiana!
