mac n cheese

We were crestfallen today to hear that a weekend fire gutted the kitchen of Rocky & Carlo's (Roadfood.com review) in Chalmette, Louisiana. Having already rebuilt after Katrina, owners Leonorda & Lou Gioe vow to do it again in this local TV interview. A contractor in that segment mentioned that Rocky & Carlo's fried chicken was his favorite, and we can't help but salivate over that incredible chicken sided with their famous baked mac 'n' cheese. What looks like spaghetti on steroids are actually hefty perciatelli noodles, whose elongated surface area allows even more melty cheese to which to cling. Our thoughts and prayers go out to the owners and staff of this iconic New Orleans eatery for a speedy recovery!

I certainly hope so -- that place is an institution in St. Bernard parish. And that mac 'n' cheese is probably my favorite ever!
