Cracklins
Chunks of fat. Deep-fried. In fat. Let's celebrate! The 27th annual Port Barre Cracklin Festival started Thursday night and will continue all weekend. There's a parade this morning at 10 a.m. and live music all day, but the real highlight will be the 12 cracklin cookers at the festival, including Bourque's Supermarket, which plans on selling just under a ton of the crispy pig bits (see the Roadfood.com review of Bourque's).
