When we originally wrote the Roadfood.com review of Steve's Pig & Ox Roast of Lackawanna, NY, we noted that they actually roast beef, not ox.  We since realized that we had no idea what an ox really was, so we did some checking and... it turns out it's just another name for a cow or a bull. Stevekc43 also clued us in to the fact that oxen are trained as draft animals. Apparently, they are the same animal, used for different purposes. So Steve does roast ox after all!

Jane and Michael Stern visit with Lynne Rossetto Kasper of The Splendid Table this weekend to discuss the fine beef on weck made with that roast ox at Steve's (Lackawanna is just outside of Buffalo, which is beef on weck country).  You can hear them on your local public radio station, or hear Lynne's show online.
