The spots where chefs want to eat today: that's one of the ways Andrew Knowlton explains what his Bon Appetit feature, The 20 Most Important Restaurants in America, is about. If you understand the distinctions between this and the 20 best restaurants, or 20 most influential restaurants, well, more power to you. #1? NYC's Momofuku. #16? Shake Shack (see the review). #20? Swan Oyster Depot (see the oysters above and the review). Restaurant on the list we most want to visit for the first time? #17: Austin, TX's Franklin Barbecue.

The only one of these I've been to is Swan Oyster Depot. I loved it. I went as soon as they opened one morning (I was on Central time, so it was lunchtime by my body clock), and got right in -- no line whatsoever. I had wonderful fresh oysters (taking recommendations from the counter guy), crab Louis, and terrific sourdough bread. The staff couldn't have been nicer. It was a delightful and delicious experience.
