Macaroni & Cheese being one of my favorite food groups, I was ecstatic after my pals Michael L and Doe Hee K suggested we have a meal at the Hidden Valley Eatery in Washington, Connecticut. The basic three-cheese dish, made with elegant unridged rigatoni, is swell, and it can be customized by adding tomato, spinach, broccoli, onions, mushroooms, roasted garlic, green chilies, bacon (pictured here), sausage, chicken, and/or smoked salmon.
