3 sink and handwash sink in truck

Hi all! I'm a new owner, but old carnie and a baker. I have a nice old P30 that is ready for the 3 sink and hand sink. My health inspector wants that set up so i can do coffees and ice cupcakes on the truck. So my question to all of you with the experience out there is do I try to build it or do I find something on ebay like porta-sink? porta-sink.com I showed the portasink-4 specs to the heath dept and they ok'd it, but my questions are 1. does it look like it will actually work/ work out well in my truck? 2. does it look like it is built well? 3. is it worth the almost $2000 to buy it rather than go collecting parts and fabricating it from scratch. 4. Is it better to have something that can be filled and emptied from the outside rather than "lugging" bottles? Please help :)

We built our three bowl sinks from 3 1/2 steam table pans. The hand sink is a 1/3 pan. The 3 bowl sink needs to be deeper (6") and we will be replacing with a new sink set up. We use a 12vDC Shurflow 2088 RV pump and two 5 gallon water coolers that we swapped out the water dispensers for hose bibbs. We will be building a new countertop as the plastic tabletop we used (due to time constraints) get dirty and is a PITA to clean. When we build the new top, the hand sink will be put next to the wall as it is now ending up next to the burner/griddle we installed. this works for us, we use (2ea) 1/3 pan, (4ea) 1/6 pans and (6 ea) 1/9 pans. Washing the 1/3 pans is a pita but doable. The deeper sinks will make washing the 1/3 pans much easier. The bottom pic shows two pumps because we use 1 igloo beverage cooler for hot water and the other igloo beverage cooler for cold. We will be adding a tankless water heater this summer and drop to one pump but keep the two coolers (tied together) for a total fresh water supply of 10 gallons. We will be building a new waste tank under the cart to hold the waste and shift the current holding tank under the sink into our bus. The tank under the sink takes up too much space that we need for our ever expanding supplies. Sorry, I can't get the pics smaller.

The wife and I use this we found it used on a BBQ forum at less than half the price they want for a new one, we used it last year and liked it
