4th of July menu--

So what did everyone cook today?? The only company we wound up with this holiday weekend (so far) was one brother in law. We started with Bloody Mary's and then had Philly Cheesesteaks for lunch. Put the ribs on about 4pm and decided not to fix the usual potato salad - bbq bean - slaw sides. Instead we had shrimp stuffed cherry peppers, potato gratin, a cucumber olive and artichoke salad, and red beans. The ribs were the star of the show - the spouse did a spectacular job on them. Tomorrow for lunch we've got a pork roast, new potatoes, green beans, squash and freshly baked bread. And tomorrow night is the best of the best - true filet mignons, Alaskan king crab legs, salt crusted baked potatoes, salads and a bottle of Merlot. I'm thinking you can't ask for anything more than this - I'm hoping everyone else is enjoying their holiday weekend as much as I am - Cheers

I was lucky enough to be invited to a family picnic-over 50 people so there were so many dishes to pass, and our host and hostess made some beautiful tenderloin, mushroom, tomato and zucchini kabobs, along with excellent grilled corn on the cob.All in all, a wonderful day!!!

Well, my dinner tonight was a strip steak topped with (leftover, 'cause I couldn't eat it all the other night) king crab meat, asparagus and bernaise sauce. Sort of a beef take on Veal Oskar.

So far we're well into our food and beverage plans - we had a Bloody Mary before lunch , put a Boston butt on the smoker, had lunch and then took off to the casino just to play the slots for a little while. As it turns out - the spouse was on a lucky streak and hit two jackpots. The brother in law and I didn't fare as well - but we all had a great time. Right now we've got the grilled fired up for the filets and the steamer ready for the crab legs. The Boston butt is going with the brother in law back to Memphis tomorrow. After tonight I may not ever eat again ---

sangria guacamole and chips burgers and dogs potato salad macaroni salad baked beans carrot cake with cream cheese icing brownies sounds pedestrian, i know, but i did make everything from scratch except the brownies, hot dogs and burgers...it was a good holiday!

nypizzanut - i found a wonderful carrot cake recipe on recipezaar...it's the one called (not surprisingly) "Why I Joined Zaar Carrot Cake"...it was completely demolished by my guests!

I realize the event has passed, but I'll add my two cents' worth for the next one and say ice cream is a great idea, you can put out different toppings for everyone (I put dry roasted peanuts in my food processor and make my own nut topping). Here's an adult topping: Princess Cup 2 cups fruit cocktail, drained, reserve syrup 2/3 cup Cointreau vanilla ice cream In a mixing bowl add drained fruit cocktail, 1/4 cup syrup, and Cointreau. Chill for a couple of hours. Serve with fruit on the bottom, 2 scoops of vanilla ice cream, and a little of the mixture on top.
