 A stupid question?

Yesterday I warmed up my new hot dog cart for the first time and tried out a couple different brands of hot dogs. The problem is my friend and I got argued about how the hot dogs should be heated. should they be immersed in the water, since the heating pan has holes in it, or should the dogs sit in the pan above the water heated by the steam alone(hence the name steam trays)?

Just wondering.

    Be Patient for the answer to your question. Some of our Wienie-Dudes are making a tour of Chicago's Beef Sandwich Stands tomorrow and may not be focused on the Wienie Rules for a day or so. They will return to their little Wienie-World shortly!! I am sure you will get some response then.

      If you are going to do any volume pull out the steamer and boil them. You cant steam them fast enough. Another thing, some dogs are better steamed and others better boiled.

        Boil your dogs. Don't steam them. Don't use the steam tray. Fill half the pan with water, crank up the heat, bring the water to a boil, and drop in the dogs. When the dogs begin to float, back off the heat. You don't want the dogs sitting in boiling water after they're floating. The steam pans can be used for steaming buns, which is an entirely different operation.

          Boil them up and let them sit, nothing better than a brown water dog.
