Absurdity For Dinner

Corned Beef Notta Pasta

Description
We used all the ingredients in a Reuben to make this flavorful dish.  It’s surprisingly simple to prepare and a wonderful way to use leftover corned beef.

Ingredients
1/2-16 oz box (8 oz) Notta Pasta Linguine
2 tablespoons olive oil
1 lb sliced corned beef, cut into bite size pieces
1 lb sauerkraut, rinsed and squeezed dry
1/2 cup Russian dressing
1 cup shredded Swiss cheese
Salt and fresh cracked pepper

Directions
Put a large pot of salted water on to boil.
Add oil to a large skillet over a medium heat.
Add corn beef and sauerkraut.
Cook, stirring occasionally, until heated through.
Meanwhile, boil Notta Pasta according to box directions.
Drain and rinse briefly.
Toss pasta with dressing and add to skillet.
Sprinkle corned beef mixture with Swiss cheese and toss to combine.
Salt and pepper to taste and serve.

Yield
4 servings

Time
15 minutes

So it's a reuben with pasta replacing the bread as the starch.  Interesting concept...

This is not authentic at all

    No sir

To make it authentic, you need to crumble some irish soda bread over the top

    and there you go

Heck, it's not even pasta. It's rice noodles. And I find the entire idea bizarre>

    Oh

In that case, you need to add a spoonful of fresh kimchi and serve with injera smeared with vegimite

The thought of that dressing being stirred into pasta makes me feel slightly ill.

Actually, for someone who has to go gluten-free (and thankfully, I am not in that category), this recipe probably would be about as close as a person could easily get if they were hungry for a Reuben.  (Now if they just made those rice noodles in a rye flavor...!)
