Why not? You don't get what you don't ask for...and what's the worst that can happen...they say no.

Those pancakes look delicious.  Now I'm going to have to find a recipe.  Are they served with any type of syrup?

Substituting the bananas for strawberries was a wise decision.

Yeah, they have both maple and pancake syrups.

You're in luck..here's the recipe from their book!

How to Make Great Pancakes
There are a few simple rules to follow to ensure that you will have excellent pancakes every time. Always mix the dry ingredients first. Mix wet ingredients separately and then fold into the dry. Do not overmix the batter or your pancakes will be tough. Mix until the ingredients are just barely combined. Heat a cast-iron pan on high, then reduce heat to a medium-high. Put 2 tablespoons of butter into the hot pan and melt it, coating the pan. Ladle the pancake batter into the pan, about 1/2 cup for each cake, unless otherwise stated. Resist flipping the cakes until bubbles form on the top. Flip the cakes and cook 1 to 1 1/2 minutes more until pancakes are set.

The ricotta cakes are a great special-occasion breakfast and a real showstopper. The ricotta packs them with protein so they leave you feeling fueled for the day.

Strawberry-Lemon Ricotta Cakes
Prep time: 20 minutes
Turnout time: 5 to 10 minutes
Feeds: 4

2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup sugar
1/2 cup butter, melted
1 cup whole-milk ricotta
1 1/2 cups milk
2 eggs, separated
Zest of 2 lemons
Powdered sugar to garnish
Butter for spreading
1 pint strawberries, sliced
Maple syrup

Mix dry ingredients together in a large bowl. In another bowl, whisk together melted butter, ricotta, milk, egg yolks, and lemon zest. Combine the wet ingredients with the dry ingredients.

Meanwhile, beat egg whites until they hold a soft peak. Fold them into the batter.

Cook as described in the sidebar “How to Make Great Pancakes” on this page, but use only 1/4 cup batter for each cake. These cakes may take a little extra time to cook. Test one to make sure it is cooked through before removing from pan. Dust the finished cakes with powdered sugar and serve with butter, sliced strawberries, and maple syrup.

Well it’s name is Backroad Pizza and it should really stay on that backroad. It’s honestly hard to even call this pizza. It was more along the lines of really crispy flatbread, with a wash of sauce (hardly detectable) and way too much cheese which had little to no taste.

My next planned drive along I40 has a preplanned stop at the Big Texan Steak Ranch.  There's no if ands or buts about it.

No amount of whining will prevent me from stopping at this tourist stop.  Last time we had to stop at the truck stop.  :(

I must experience it!  I will not be eating a 72 oz. steak.

Thank you for sharing your experience and can't wait for more.

I forgot to mention something.

I HATE it when the pancakes take up all the space on the plate. Give me a bigger plate!  I need room for the syrup.  I'm a dipper.

Not that I agree or disagree, or really care for that matter--I'm just curious. Why was Eating the Road put on the Blocked List? A PM will do.

Haha...I agree. Just a short while ago I saw someone eating their full stack from the middle out. I thought it was strange until I realized that's exactly why he did it. He saturated the center with butter and syrup. Once he had a hole....problem solved. I've yet to try this myself but I look forward to applying this Jedi technique.

What is this "Blocked List" and how does one see it? I don't believe I'm on any said list....I didn't get any warnings or messages....and I don't think I did anything wrong....did I? It seems I can still post.

I'm supposed to be driving from Los Angeles to Denison, TX in January.

I've been told that I40 can be snowed in so we'll probably be taking I10 which is a bore!

On our last trip I "made us" stop in Albuquerque to have lunch at The Frontier.

I'm so lucky.  My friend would rather stop at McD's and BK.  At least I get one stop for me.

Oh man....I10 is a tough one....zzzzzz. I can't do that! Follow my route :P

So does that mean no Big Texan in January?

Wait...they don't care about any stops along the way? You've got to get them to read up on a few of the spots and get them excited.
