Adventures in Tofu

In an effort to diversify our palates and perhaps develop a taste for healthier foods (not ALL the time, just sometimes), my spousal unit, at my urging, made a dish last night with tofu, vegetables, and (homemade) peanut sauce served over rice. The peanut sauce was made with low fat PB and reduced sodium soy, along with other ingredients...I have to say, though we were both skeptical about it (the tofu), it was very, very good. I had purchased the softer tofu accidentally, I think next time we'll use the firmer kind, but we both really enjoyed it! And tonight's leftovers were even better. Anyone else have any positive tofu experiences? Suggestions? Recipes? We've also been experimenting with TVP, and have yet to get the consistency right for burgers, but we've made a couple good "meat" loafs.
