Fried-potato fans, please take note. The July issue of Gourmet magazine, hitting the news stands about now, contains a Roadfood story about 10 of the best hash brown & home fry destinations in the nation.

    Actually, the spuds in this picture are not from any of the places listed in the story. They are from the Tea Steak House in Tea, SD. ("Take your sugar to Tea")

      Thanks for answering that question before I asked it! They look fabulous...and I am now trying to figure out a way to fit Tea, SD into my travel plans.

        In another thread already started, pre-cooked potatoes are being used. These look like raw potatoes, grated, then cooked and browned. I've tried so many ways to get a good crispy on the outside, soft on the inside(like WH, SORRY!)they get there's from a "Sysco" carton.....they do here anyway. The closest I've come is getting the dehydrated "Betty's" in a box and soaking them in hot water with a tad of salt, then frying.

          I agree that it looks like they used raw spuds for these hash browns. While the outside crust looks fine, they seem like they may be too starchy inside.
          In all my years of cooking, I have never been satisfied with my results in trying to create the perfect hash brown. Home fries are no problem and a specialty of mine, but I do like hash browns so much better.

          Forget Betty's in a box, and try Simply Potatoes brand. They usually can be found around the meat dept., next to all the other premade stuff in tubs. (That stuff is another topic) Simply Potatoes comes in a green bag. Their shredded hash browns are excellent and you can make a great crispy accompaniment to your breakfast.
          They are also great for meat hash or with some simple ingenuity, potato pancakes.

          Since I don't care much for GOURMET magazine, I guess I won't know where to find the best 10 best out of all fifty states. I will say that I worked at Bubba's Diner in San Anselmo, CA. We did home fries there. I see that it does not get a mention in the Roadfood guide, but when I worked there I think that it would have received a mention. We used a LARGE metal spatula to shovel them on a plate. Whole grain pancakes and buttermilk drop biscuits. But it was the home fries that were the mainstay...

          Since I left it has had a series of owners and the whole town was recently flooded with water. If anyone is in or near the Marin Co. area, I would love to hear any news that can be found.

                  We love potato soup, but haven't peeled potato one since discovering "Simply Potatoes'" hash browns! Warning, though: if you tuck them away in the fridge and forget about them, they will spoil. Also, we tried a flavor variation (Mexican style?) and found it nasty.                     Easy, easy. I make a variation of them called "pommes darphin" which is basically a potato cake. The object is to get all of the potatoes out of the pan in a "cake" like fashion. Of course if you wanted to turn them into hash browns, don't fret over the "cake". Take a couple of russet potatoes, peel them, run them through the small French fry blade of the mandoline. DO NOT WASH! The starch is necessary for them to be creamy and crunchy. Fry in oil and butter (50/50) salt and pepper to taste. Done!

                      My favorite non homemade hashbrowns are the Mrs. Dell's brand, they are the best frozen hashbrowns one can have!

                              Funny, I found that to my liking when I make very crunchy hash browns I always rinse the grated potato in cold water and drain and rinse again............. I then place the potato in a clean tea towel and squeeze out any remaining moisture this technique makes for crisp and crunchy hash browns and prevents the inside centers from becoming gluey and sticky ................ If one likes the "creamy" center as you call it then your way will fit the bill.........

                                    All I do is cook them in salted water, though I could probably simplify and cook directly in milk. At the same time I add lots of chopped onions or, if I want to get fancy, ½" slices of leek. Then I put them in milk, add lots of butter (real, and unsalted!) and simmer to meld the flavors. Finally, I might use a stick blender to purée the soup very slightly and season with more salt, if needed, and a goodly amount of fresh, coarsely ground black pepper. Topping it with real bacon is good, too; but no "bacon bits"! You can also chop, cook, and drain the bacon and add it directly to the soup at any point.                                           No, no and no. A canned potato? I don't think so, especially when there are so many versitile potatoes in the markets these days: Yukon Golds, Russetts, Reds, French Fingerling, Purple, baby whites, Maine, just to name a few.                                                       I have fried the potatoes in a can as stated above, and they are great. I buy the ones already sliced and add onions and fry in butter. Illechef "try them, you'll like them". I know that fresh potatoes are great but when you don't have them or don't want to bother cleaning, peeling, slicing, etc., the canned ones are good.

                                                        Lleechef, a few days ago I had an 8 a.m. eye exam in the medical complex across Boundry Street from the Sewickley Country Inn.

                                                        In a fit of insanity, I decided to stop in the Inn for breakfast. Quick review: "Them greasy, soggy spuds ain't no pommes darphin!!!" and the rest of the breakfast went downhill from there!!!.

                                                          GeoNit, thanks for the reply and I'm not at all surprised by the Inn. We used to hang out at the Sewickley Hotel after work.

                                                          Looks like quite a few eateries have popped up. I haven't been back in about 2 years. My father who is 81 still works at Yankello's!!
