I agree that it looks like they used raw spuds for these hash browns. While the outside crust looks fine, they seem like they may be too starchy inside.
In all my years of cooking, I have never been satisfied with my results in trying to create the perfect hash brown. Home fries are no problem and a specialty of mine, but I do like hash browns so much better.
Forget Betty's in a box, and try Simply Potatoes brand. They usually can be found around the meat dept., next to all the other premade stuff in tubs. (That stuff is another topic) Simply Potatoes comes in a green bag. Their shredded hash browns are excellent and you can make a great crispy accompaniment to your breakfast.
They are also great for meat hash or with some simple ingenuity, potato pancakes.
Since I don't care much for GOURMET magazine, I guess I won't know where to find the best 10 best out of all fifty states. I will say that I worked at Bubba's Diner in San Anselmo, CA. We did home fries there. I see that it does not get a mention in the Roadfood guide, but when I worked there I think that it would have received a mention. We used a LARGE metal spatula to shovel them on a plate. Whole grain pancakes and buttermilk drop biscuits. But it was the home fries that were the mainstay...
Since I left it has had a series of owners and the whole town was recently flooded with water. If anyone is in or near the Marin Co. area, I would love to hear any news that can be found.
