 Amarreto Cake with Peaches

Well I'm going to take a shot at this.  My own creation.  I have no idea how it will turn out, but it's hard to screw up a dessert.
 
Walmart has a sale on fresh peaches and I tried them this week.  There were great.  So, I'm going get some more, blanch them so I can remove the skins and then simmer them just a little with some brown sugar and lemon juice.  Then just slice them up and put them in the ref. 
 
Next, I'm just going to make a yellow cake mix and add chopped pecans.  When it's finished, I am going make two layers and sprinkle or soak (not sure) some Amaretto Liqueur on them like you see on tv.  
 
I'll put the sliced peaches inside the layers and cover the cake with legit whipped cream or I could just make round circles out of the cake,  soak the circles, put a scoop of ice cream on them and top with the peaches and whipped cream. 
 
How bad can this turn out..We shall see.

        This sounds delicious, but depending how heavy the amaretto soak and peaches are, it may all collapse. Do you have a trifle bow?  Its really a great "investment" for desserts like this.  I love mine, its a simple large clear glass bowl on a stand, did'nt cost more than $15. Make your cake, cube it up and layer it with cream, liquor, fruit, whatever.  It looks great and it won't collapse.

              Everyone made their own dessert so to speak.  A bowl of legit whipped cream was on the table, the compote, the circular discs of cake and the ice cream. 
               
              Instead of making a layer cake, I decided to make a sheet cake of the same cake mix; I just added chopped pecans.  
                
              I painted (3 passes..not enough!) the entire sheet cake on the "finished" surface.  That was a mistake!  What I should have done is do my cut outs (I used a wide rimmed glass) and paint the bottom side of each cake..not the baked finished side.  The amaretto would have been absorbed easier and I could have seen the penetration of the liquid instead of just guessing at it.  One of my friends said that's the way she does it.

              The peach compote turned out real good.  I did have to add a bit more sugar though. I'd say I used 1/2 cup to 12 small peaches.  But, all you need to do is taste it to your liking.  I simmered the peaches (78 cents a lb..amazing price) so I could peel the skin. I sliced them and added the sugar, some fresh lemon juice and I added a little French raspberry liqueur.  I also added a little fresh ground black pepper (it's good) and salt (brings out the sweetness in things) and simmered it for maybe 6 minutes.

                  SK - Actually the trimmings from making the cake circles..They're all gone.  Tastes pretty good.  I got all the pictures...Will post next week.

                  I think I need to get a better brand of Amaretto though.  I will look around.  Something stronger.

                    Ben, Thanks for the great dessert idea! We don't have local peaches yet but I will definately file this one away. What brand of Amaretto did you use?

                        Agnes..The wrong brand!  I went to Walgreens and I saw two for one..It was about $11.00.  There's now a picture on my post showing the brand Lady Velvet.  Now in fairness to the company, their Triple Sec is fine for Cosmos my wife says.  But, their amaretto it is not strong enough for what I made. 

                        I'm going to take SK's advice (it's never too late to learn..Young people have good ideas) and I will buy the one mentioned in the tv ad with the handsome bartender and the beautiful young woman.

                        I am going to try this again because I love almond paste, Amaretto, marizapan, and all things almond flavored.

                                  No, these were fresh peaches (Groves de la Walmart) and they still had a good firm texture to them.
