Anyone Dry Their Tomatoes?

Good year for tomatoes and saw this on foodgawker.com so I decided to give it a try. I quartered about ten tomatoes and placed on a cookie sheet along with some garlic cloves. I tossed all with a tablespoon of olive oil and sprinkled with a little kosher salt. I baked them for five hours at 225 degrees. I took them out and let them cool. I then layered them in a mason jar along with fresh basil leaves and covered it with olive oil. The taste of these tomatoes is so good! According to what I read they will keep quite awhile in my fridge(if I can stop myself from snacking on them!). I used a few when I made okra, tomatoes and corn the other night. So good! They really added a depth of flavor.

I dry my tomatoes when I get out of the shower. It's one of the first things that I do.

NYPIzzaNut me too Me three, over rice please! Looks like nice fresh corn too. Corn here has been ridiculously low this year. I bought a crate of 48 ears for $7.16, creamed most, froze the rest on the cob. Summer lovin'!

i use semi dry for pizza with homemade mozzarella andfresh basil .also dry them with no oil in a dehydrater till dry and keep in a plastic bag untill i need them .it takes 25# fresh to make 2-3#dry. i dry all summer to eat in winter.saves a lot on dry toms in the store.

Every single year I "dry" my tomatoes. (we forget about them and they shrivel up to nothing in the refrigerator). We finally stopped planting. Corn, on the other hand, gets the royal treatment. No freezing or creaming it. Pick it up fresh every night at the local farm stand drench it in butter and coat it with salt....nothing like WISCONSIN sweet corn. Short season, wonderful taste.

Mine don't last long enough to dry...when I need sun dried tomatoes, Costco has a nice large jar...I prefer to enjoy the vine ripened tomatoes nice and fresh!!!
