Avocado...on everything!

The great thing about winter is that I get those great Chilean avocados in my supermarket that are in season in the Southern Hemisphere. When I lived in Chile, I learned to eat avocado with absolutely everything - and my favorite is to spread it on toast with some butter in the morning. I just had some today and it was soo good and it makes my skin and hair feel great. YUm.

What are you favorite avocado recipes?

    Avocado, cream cheese, tomatoe, red onion, bean sprouts and a little mayo on a toasted hoagie roll.

    I slice it an put it on almost all my sandwiches.

    Second favorite. Tostada with refried beans, avocado, tomatoes, onions and lettuce.

    I love it sprinkled with a little salt and spooned right out of the skin!! Like it in everything. Makes a great Mexican chicken salad.

    I'm With Lynn... Split it in half, dig out the pit, salt and spoon away!! If you want to get "fancy" a few drops of lime juice in the crater will add to the "goodness"

    The pros and cons of living in the Ohio Valley...CON- We never get any cheap avocados (like the 6 for a Buck we used to see in SoCal!). PRO- Now and then we get some "not too expensive" at a local market. The natives don't understand that "soft is good" when it comes to touching the avocados!! So we usually find the ripe ones left by the locals !!!

    Chopped up with onion and tomato cut the same way, Smushed just a bit so that it is still in chunks, but sticks together, Stir in a little Salsa and the level of "hotness that you like and you have the ultimate condiment. I love this on Bacon-Burgers and Hot Link Sausages.

    We like to make a spicy thai salad with pink grapefruit, unsweetened toasted coconut, shallots and avocado. The dressing is thai chiles, lime juice, fish sauce and a little sugar.

    Hello All,
    I had my first taste of avocado 2 years ago at the age of 50,
    and I fell in love with it.
    I just slice it up and eat it plain, with a sip of Dr. Pepper after
    each bite.
    Dang it, I think I'll slice one up now.

    Avacado- an almost perfect food- good for your skin and hair and heart! Guac is good, but I like them in a salad I learned from an aunt, while living in Florida- grapefruit supreme slices, avacado slices- placed on salad green of choice- mix sour cream with a little lime juice and a healthy dab of honey, use as a dressing and spoon over salad. A really tasty, bright and easy salad! Also love sliced avacados on fish tacos!

    A nice little first course adapted by me from Jacques Pepin's "Fast Food My Way":

    Halve, pit, peel, and large-dice the avocado. Toss it with a little lime juice to prevent darkening.

    Lay a little shredded lettuce on a salad plate. Top with avocado.

    In a small bowl, mix together a little ketchup and mayo, thin with a little water, add hot sauce, salt, and pepper to taste. Drizzle sauce around salad or over the avocado.

    Top with fried tortilla strips, crushed tortilla chips, or even sunflower seeds, almonds -- anything to add a little crunch.

    My new favorite is "Tempura-Fried Avocado" with a touch of horseradish marmalade. (Thank you Cask and Cleaver, Fallbrook, CA!)
    This is a hit even with my "I don't like avocado" son.
    But, it is the only way he will eat them.

    Some Mexican restaurants do fried avocados by filling the cavity with seafood dressing and breading and frying the whole thing. Not bad but the avocado flavor gets lost in all the dressing and breading.

    I was worried about that with the Tempura-battered ones, but it didn't happen. The tempura batter is so light it doesn't cover up the avocado flavor. The frying makes the texture of the avocado even creamier. The horseradish marmalade (in very small doses!) gives it some zip.

    My mom always sliced one up and combined it with gratefruit sections and spooned it over cottage cheese. It was one of our favorite lunches or light suppers. I love to slice one up, add a squeeze of lime or lemon and then lightly sprinkle with salt
    and fresh ground pepper.

    I like mine simple:
    Get a homemade flour tortilla, mashe some avacado,sprinkle salt and voila! An avacado taco.... and a Big Red to wash it down with.

    I took advantage of the Kroger "Old Farts" discount day (first Wed. of the month) to get 5 Avacados at 50 cents each. They are the big green ones, and a couple of them are still a bit hard, but they will soften up in a day or so. Salt, spoon and easy-chair are all ready !!

    Sliced up in a whole wheat pita, with swiss cheese, tomatoes, red onion, sprouts, tomatoes, and wee dab of hot musard.

    On chili, as a garnish

    guacamole

    spread on bread instead of butter.

    mmmmmmmmm so buttery rich and good and refreshing.

    Neat ideas all!

    My way of choice most often is... split w/ some good salsa poured in the middle. Pace medium works fine.  And SnP.  And lime juice on the edges if I have some.
