    Thats some good looking grub John! You should stop by my Beekman roadside bbq some day for friendly chat!

        Man - that food looks unbelievably good. I like the family & cat photo too! I hope to achieve greatness on the smoker one day before I quit cooking. I just picked up a cheap one (electric) at a rummage sale last summer. I did the country style ribs a few times and they turned out pretty well, so now it's time for some serious meat!

          Regarding the Butt: did you place the butt in the smoker with the fat cap down or did you trim it off?

            This one has the fat cap down, I have done fat up & down and not noticed any difference in the taste.
