BBQ Florida Style - 56K WARNING Mon, 12/18/06 11:49 AM (permalink)
It’s 5:15 am Sunday morning, butts ready to go into the smoker








Using the Smokin Tex, it does a great job on butts





While that’s smoking I’ll prepare the Cole Slaw and finish up the beans


A Mandolin is a must for turning a head of cabbage and some carrots into Cole Slaw














Beans have been in the refrigerator overnight, time to get ready for the smoker








It’s chicken time, ready to go into the smoker





Beans and chicken into the Traeger





Fourteen hours later the butt is coming out, getting foiled, and placed into a cooler to rest





Chicken is done





Pull the Butt





Dress the Cole Slaw





Start setting up





It starts getting a little hectic, every is heading for the food so I have to shoot fast








Grandkids





She’s trying to get Bitsy to lick her fingers

          I've got to be the PIA. I think electricity was involved in this process...may be good eats but NOT bbq.

            Yep, electricity heats an element that fires off the wood chunks. It sure tastes like BBQ, better than anything I've ever eaten in a "Q" joint.

                          This recipe comes from Danny Gaulden - http://www.dannysbbq.com/

                          I've tried a lot of different Cole Slaw dressings; this has evolved into the one everyone likes the best.

                          For a large head of cabbage I used 6 tablespoons of salad oil, 9 tablespoons of apple cider vinegar, 6 tablespoons of sugar, S&P, and about one tablespoon of garlic salt. I could have used just a tad more dressing. The red is from the carrots I grated on the mandolin for color.

                          Danny Gaulden's Old South Slaw Dressing

                          2 tablespoons salad oil
                          3 tablespoons apple cider vinegar
                          3 tablespoons sugar
                          1 teaspoon salt
                          1/2 teaspoon black pepper
                          1/4 teaspoon crushed garlic

                          Even though we use a modified Corky's slaw dressing at the restaurant, there's one I like better. Matter of fact, it's the only one I fix here at home. I LOVE this stuff, but you may not. It's what I consider deep, old south, and what Carolyn and I had every time we went to eat at a seafood house, bbq joint, etc. in south or north Louisiana. Matter of fact, Carolyn's mother fixed a very similar recipe all her life, (she lives in Baton Rouge now and spent many years on the famous river road between New Orleans & Baton Rouge as a home education teacher). Lot of fine cooking goes on down there. Anyway, here is the recipe. It is a sweet sour mix. If you like the tart, sweet taste on your slaw, you'll love this. Nice thing about it is that you can't "over extend" this dressing. If you apply too much, it doesn’t just stick to everything and make it too wet as does a creamy dressing. It just drains down to the bottom. It will keep a couple of days or more on the slaw before crispness is gone. Don't let the simplicity fool you. I've always said some of the best cooking comes from simple recipes. This is one of them. Just takes a couple of minutes to fix. Also, don't let the looks of it fool you. Just try it and let me know what you think.

                          Mix well and pour over slaw. This is a small recipe and makes enough dressing for about 2 people. Adjust accordingly.

                              Is that Roman Meal bread in your pantry, there on the shelf in the back?
                              That, and rye bread are the only bread's I ate growing up.
                              We never had white bread in the house..

                                  It's Autumn Grain bread, I prefer rye but it will do. I'm using a point & shoot Canon camera, it does a great job because it damn sure is not me.

                                          it is not spooky it is down right scary, except for me it is not the kitchen layout, but the utencils.

                                          He has my collander, mandolin, big silver bowl, cutting board, sauce pan, big cookie jar, corelle plates, John, I want them back!!

                                                        When I as in flight school I lived on Hamburger helper Hash, dehydrated potatoes, onions, and ground beef. I have not seen it in years; my wife brings something home for me to try from time to time. It will not be around much longer.

                                                        That little girl has her claws, a cat door, and the whole outdoors as her private hunting preserve. She has brought us mice, moles, birds, lizards, etc, dead and alive.

                                                          John,just like in prepackaged add on's such as the onion soup mixture u used on u'r burgers; the time has come to seriously consider Pellet Smokers, u'r Traeger 124 appears to be the perfect answer for the new style of handling ribs, chicken and pulled pork or Italian Beef..Sometime we get so traditionalized that we forget New Ideas work..
                                                          If I had not had my custom grill designed just for my cart and if I would have looked ahead further, I would have gone down the pellet route too..

                                                            Done over Kingsford, hickory chunks and lump charcoal.

                                                            Although I wouldn't mind a sandwich or 2 from JohnA's, that and some cole slaw. I'll be trying that slaw recipe tomorrow. Thanks John for sharing it.
