BBQ beef short ribs in Texas.

I thought y'all would enjoy reading this very interesting and mouth watering article by Daniel Vaughn regarding BBQ beef ribs from his current Texas Monthly BBQ newsletter.

    That's a real good excuse to try The Pecan Lodge again.  I think they were having an "off" day the first time we tried it.

    Jim, After you dial in all the elements that go into making good BBQ, you can certainly understand how easy it is to have an "off day".

    And our one experience there was also accompanied by my perhaps too high expectations after reading the reviews and seeing Guy Fieri drool over it on DDD. 
     
    Then there was the fact that The Princess was quite unhappy with the environs, the wait, and the general ambiance.

    Many people think good que is easy as sticking meat in the grill and adding a few wood chips and viola instant bbq.
     
    Where Kreuz and some of the bigger operations have their pits indoors many of the smaller joints have outdoor pits or even mobile pits.
     
    Those things are like a bratty child throwing a hissy fit.
     
    You gotta watch the temp, the wood, the rub, the injection, the weather, the humidty, the wind, the meat and many other variables.
     
    It is easy to have a bad day, and that bad day comes when you lest expect, just because of Murphy and his stupid law.

    Don't know of that many places here that serve beef shortribs.
    You can buy them at H.E.B. and make them yourself,but i never see them like the ones in the article at the store.

    A good butcher (if you know one) who takes in whole sides or large primal cuts can cut them as illustrated in the article.
     
    I braise (regular) beef short ribs all the time. Luckily, the butcher at my local Wholefoods cuts the best and thickest ones for me when I need them.

    I've always braised short ribs too.  Never tried to BBQ them.

    WarToad, I think they need to either be "low & slow" braised for a few hours or, "low & slow" smoked as BBQ.

    TW, the brisket and the beef ribs are good at Stile's. So is the sausage and there is a real good corn casserole for a side, but I would stay away from the pork ribs. They don't quite have them down yet.

    The beef ribs at John Mueller's are the real deal. Up until I tried this one, the best beef rib I'd ever had was at Louie Mueller's in Taylor. This was better. When we arrived, they were out of brisket. While I realize that brisket and beef ribs aren't the same meat, this was our only chance to try any beef at JM's. Incredible - soft, moist, tender, and peppery.

    Sweet photo, and yes, John Mueller is putting out the best one in Central Texas...Black's is close but at the end of the day, Mueller is still at the peak, and alone.

    I would love to try them but don't think anyone in my part of Florida is doing them. Would try them myself but don't have the confidence to make them right and justify the expense.

    I have seen others say that Mueller also makes the best brisket of the lot, too. That said, I had Franklin's brisket earlier in the week, so I was OK with going off the brisket grid, so to speak!

    WarToad, I think they need to either be "low & slow" braised for a few hours or, "low & slow" smoked as BBQ.
    If you "unroll" them into thin strips (English cut works better) they can be used for bulgogi or another recipe involving marinated and grilled beef.

    I've bought them at Costco that way if you're meaning, boneless short ribs.
    Costco sells them in packages of about 8-12 thin strips of very heavily marbled (Choice) boneless short ribs.
    I first brown them and then braise them (with all the usual suspect ingredients)
    for about 2-1/2 hours at 275 degrees.
