Tough to limit it to two. Different Q calls for different sides...with that in mind: Chicken - beans & potato salad Ribs - a fine sliced or thread slaw & beans pulled pork - thread slaw & homemade hot pickle chips brisket - beans & more brisket

Definitely a good vinegar based slaw with all types of Que PLUS: Ribs- Hot Texas Style Pinto Beans Brisket Same as Ribs Pulled Pork -My Brides Potato Salad Chicken - Corn on the Cob Shrimp - French Bread Possom - Listerine!

It depends on the place. I love the Salt Lick's potato salad. But some other places, not so much. I don't like eggy (eggey? eggie?) salads. Some places the beans are great. Sometimes it's a good corn on the cob. So definitely cole slaw and something else.

Real New Orleans BBQ Shrimp, the hot sauce, garlic, pepper, beer and butter stuff...not the BBQ sauced shrimp you'll see in bars and pubs from time to time. As i think about it, other bbq doesn't really need sides like bbq shrimp need good bread. Do I like slaw with pulled pork? Sure. But you just can't eat BBQ shrimp without crusty french bread.

Really depends on the restaurant. If it's Smitty's in Lockhart, it will be their beans. If it's Deli-News in Dallas, their potato salad and pickles.

I think its more about knowing what the restaurant is "known for." Even if I was the world's biggest coleslaw fan, I wouldn't order it if the joint was known for doing something better.

My personal favorite sides are fried okra and black eyed peas, but I don't know of my places serving them. The bbq place closest to my home does serve them, but when I eat elsewhere I try to determine what they do best. I love good slaw, baked beans, and most other well prepared sides.

Good slaw is important to the barbecue experience, especially with pork barbecue. None of that mayo-drenched junk, either, a vinegar dressing for slaw is best. It can be slightly creamy, but not creamy like potato salad. Yuck. Baked beans come next. Non-gloppy potato salad after that. Corn on the cob is a favorite with ribs; you are already a bit messy on the fingers; why not take advantage of it?

often, I feel so limited and unfulfilled when the choice is only two sides. I'd rather pick 4 half sized sides - variety is the spice of life.

2? Grilled italian bread and green salad. 4? Grilled italian bread, green salad, corn, potato salad. Grilled italian bread: Take a loaf, cut it in half, then lengthwise half again (4 pieces), place on grill till nicely toasted. I like it almost burned.
