When you hear BBQ, what does that mean to you? For me, BBQ is pork, spare ribs!!! None of this pulled pork, brisket, tri tip, shoulder, butt, links, etc etc. Give me pork spare ribs with a bbq sauce that isn't too sweet or spicy and I'm a happy camper.

To me, BBQ is any meat that's been smoked for a long time over fragrant woods, then served with some kind of sauce--there are so many different regional variations of sauces, though, that I can't pick just one. Raised in Florida, I ate a lot of Georgia-style BBQ, which tends to be a sweet, tangy, tomato-based sauce.

PORK spare ribs, no sauce, for me. Would much prefer some prime rib bones but that is rather hard to find in my area.

Regardless of what the defining of BBQ is, personally, I prefer grilled over the smoked, however there is one exception. Hay's in Lexington, TN is absolutely the best. The definately do the smoked and it is delicious. I got a smoker here at my residence and my family prefers just grilling with charcoal. Personally, so do I. My personal favorite is a combo plate piled high with pulled pork and thin sliced beef along with a huge side of thin cut deep fried potatoes. For sides I’ll take the dirty rice, garlic bread and a couple of beers. I like the sauce on the side, mild for most of the meal, some super hot for part of it, vinegar based please. I’ve had some good spare ribs, but have had better luck with baby backs. I had meant to go to my favorite joint this weekend but the pants are getting a bit tight, and I knew I’d end up stopping to look at cars, must…practice…self control.

Paul, We got to get you to NC. Half my family is fron Cocke county but there is NO good Q in TN. Acceptable but not good. Come to Lexington NC for the real stuff. Sorry but that is the truth.

Oh, and I am pretty easy to please when it comes to BBQ. I love ribs, but I also love pulled pork sandwiches.

BBQ is pork cooked over wood coals. Good BBQ doesn't need any sauce. Sauce is used to compliment the BBQ, not be the BBQ.

Now children, let's play (I mean write) nice.. No need for name calling. We all have our personal favorites when it comes to BBQ. I can't pick between ribs, pulled pork, or beef brisket,'cause I love them all. So I usually get a combo plate at my favorite local smoke pit. Then I have to pick which two of all the wonderful sides I want to go with the meat. Argueing over the meat itself, fuhgettaboudit antihound. You're new here. There have been bigger "arguments" about which sauce constitutes real BBQ or is the best. And if you really want to see some fur fly, start a post about whether chili has beans...

Antihound is just one of a dozen or more people on these boards that seems to have no manners. One person, long ago, made the statement "I have never seen such an unwelcoming board". My statement is that in the past year, "I have never seen such poor manners displayed on these boards."

True barbecue to me is red meat....beef and pork. Brisket, spare or baby back ribs, pork butt, or whole hog. Cook it low and slow, sauce on the side. Chicken, turkey, etc, can be barbecued, but typically they don't cook for as long, or as low a heat, hence they are more like grilling. Same with fish. Now, I love grilled food, including St. Louis' beloved pork steaks, sirloin steak, and all kinds of grilled sausages, but it's not real barbecue.
