BBQ'd chicken

I did something tonight for dinner that I hadn't done in a long time. I did plain ol cut up chicken on the grill. No marinade & no sauce just a little garlic salt & pepper. Got the coals nice and ashy and then got the grate nice and hot. Put the chicken on the hot grill and shut the lid for about 10 minutes. Turned it a couple times and then stuck a breast with an instant read thermometer. It sure was good! A bit smoky from some left over hickory that was mixed in with the briquets. MikeS.

I routinely grill whole chickens indirectly on my Weber. Slip a split clove of garlic, and some fresh sage or basil under the skin of each breast, toss some salt pepper, herbs and garlic in the cavity, and some hickory on the coals, cook for an hour. I make a smokey stock with the carcass and freeze it.
