Back in the Saddle!

I have been in the food biz for 30 years. Sold my cafe 5 years ago and now teach Culinary at a Vocational High School. Just bought a Traditional Taco Truck from Cali. I have a few questions. Some of which will be answered once I get her up and runnning. Steam table- drain and reheat everytime I move? can I cover  the food with plastic wrap or foil, then move w/o draining? Steam table and fryer both have locking lids. I want to add a grill but it wont fit under the hood, probably need to add more hood?
I am so psyched to be bringing good food to the people again, this time with out all the headaches and financial burden of a brick and mortar place. And to be able to bring auhentic tacos to Maine....these folks have no clue what they been missin!

drain steam table? -i dont but be carefull not to much water and keep the pans in it.
 
if both have locking lids great! but i would cover the food.
 
if you cant relocate the grill to fit under the hood i would say yes have to add to the hood.
 
good luck on your new truck p.s. i love maine we used to go up there bout every week end in the summer (oob, saco, etc.) when we lived in vt. boy do i misss that

I live in Mapleton, outside of Presque Isle and I am looking forward to REAL mexican tacos! I haven't had real mexican food since I moved to Maine three years ago.

we will be covering Belfast to Rockland and some festivals. Mostly just do it cuz I love the mexi and I know plenty of others do too, so since I know how.."..here it comes..I post on Facebook where we will be. Page will be set up soon as I get er all dolled up and inspected.
