Hey all, I'm putting a fish Taco on my menu. In most cases I see the recipe beinging about the same ingredients. My question is??????????/ what taste do you like to see in the Fish taco,a creamy lime kind of taste with the slaw, or a pico De gayo with red ripe tomatoes extra Lime like for Ceviche, (or both)....Thanks for the help...............I'm not doing mango or anything like that because of the cost......... Bill

My suggestion is a creamy chipotle dressing.  and an abundance of Red Cabbage; more than seems necessary.  Lime wedges on the side. 

My favorite fish tacos are very crispy fried.... But having the option of grilled fish as well would probably appeal to a lot of customers that will be thinking health consciously.

Whatever sauce or cabbage used...I believe it is best to keep them seperate until service. A prepared slaw always gets limp and watery and the crunch to the cabbage is a nice fresh factor to a fish taco.
 
Here is a popular fish taco by Mo's restaurant in Portland (bleh morning show people). I would jump on that as much as possible...while keeping the sauce in squeeze bottles and a nice fresh crisp cabbage. The fish is delicious prepared a variety of ways...and maybe more of a regional preference unless you live in an area where you see them on rare ocassion...and happy to find it this way or that way.

Beer batter, Pico de Gallo with some fresh roasted corn in it, slaw and maybe a squirt of Chipotle whatever... Lime wedges on the side.
 
Finally got the  building inspection today, power goes in Tuesday AM... Might be serving lunch tomorrow!!!  I had also planned fish tacos for a special on opening day.
 
Good luck with the tacos.. should be a hit...... What kind of fish?

Hey Chef, I hope you get out tomorrow, Good luck let me know how your first day goes...I thought about using a squirt btl with a Chipotle cream sauce, Columbia River beer batter Pollock shredded cabbage and a California like you said Pico with Corn and maybe black beans.....Good luck Buddy................................Bill
