 Baked Beans with Molasses and Bacon and hotdogs

Baked Beans with Molasses and Bacon and hotdogs Fri, 08/21/09 3:59 PM (permalink)
I tried this out for a family bbq over the weekend. It's tasty..the recipe is not mine, but i found it good and simple. 

RECIPE INGREDIENTS
Large can prepared Beans with sauce (baked, Bush's, Pork and Beans) 4-6 wieners - cut into 1' segments 1/4 cup catsup 1/4 cup brown sugar 1/4 cup dark molasses 2 Tblspoon dried onion flakes 1/4 tspoon ground garlic 3 strips bacon cut in half

DIRECTIONS
Combine beans all ingredients except bacon into large casserole dish. Add some water if too thick.

Stir well to break up brown sugar.

Pat ingredients evenly. Top with Bacon.

Cook 375 for about 45 minutes or until bacon looks done.

Can substitute Maple Syrup for molasses.

    That dish is a summer staple in these parts, but without the hot dogs... although they might make an appearance next time I make it, sounds good!

    And it's sacrilege around here to use anything but Grandma Brown's Baked Beans.

                Mmmmmm...Grandma Browns!  With bacon, mustard and brown sugar at every picnic as a kid!  I think I have a couple of cans in the cupboard.

                    Last time I had this meal was in southern Illinois.  They gave me the receipe, but it got lost.  Plan to make this week.  Thanx...I'll think of you when I am devouring it.  All the best!

                      For an interesting addition to baked beans, add a tablespoon of instant coffee.  It adds a smoky undertone that most people can't identify.

                          @NYPizza -- for sure. I like always add a few shakes of hot sauce to my dish!

                          @billyboy--delicious. So often these quicky and homey foods are memorable.

                          @Fieldthistle-- That makes me feel nostalgic as well..the whole atmosphere and casualness and coming together of a church picnic is appealing. It is a yummy dish!

                          @Bigfoot--I never thought of that!  I would be more apt to add it this recipe. Someone suggested adding coffee to cooking lamb. That turned me off, but i think it would add a flavour that would be interesting.

                            I've been making this for years. I thought I adapted this from a recipe, attributed to actor Walter Sleazak, in a Craig Claiborne, New York Times cookbook. But when I checked the original recipe, I found that there is absolutely no resemblance, except for the fact that it has hotdogs. A mind plays tricks after 30 years of making something.
                             
                            Franks and Beans Casserole
                             
                            I package of hotdogs, cut up into bite-size pieces
                            I jar of B&M Baked Beans
                            I medium onion, sliced and microwaved for two minutes to soften
                            1/2 a pound of part-skim mozzarella, shredded
                            1 teaspoon dry Coleman's English mustard
                            1/2 teaspoon garlic powder
                            2 Tablespoons Worchestershire sauce
                            2 Tablespoons Pickapeppa sauce
                            Hot sauce to taste
                            Salt and pepper to taste.
                            8 one-inch by three-inch thin slices of Cheddar for garnish
                             
                            Directions
                             
                            Mix all the ingredients together, except for the Cheddar and place in a round, microwaveable, covered casserole. Microwave on high for four minutes, then turn 90 degrees and continue cooking for three more minutes. While the casserole is cooking turn on the broiler. Once the casserole is done, remove the top and place the Cheddar slices atop the the hotdog and bean mixture like the spokes of a wheel and then place the casserole under the broiler till the cheese bubbles and begins to turn brown.
                             
                            Serve with a salad (if you're feeding rabbits), and rye bread and butter.

                              @Michael Hoffman-- Laughs..it's starting to happen to me. I used to tease older people about such matters as the mind playing tricks on you, and then it happens to you one day. Shrugs.

                              I love the addition on cheese and the mildness of mozzarella cooking along with the rest, and then topped with cheddar and broiled. YUMMY.

                              Those are perfect accompaniments  in my opinion. Yes, i would have the salad with it too. I find it is nice counterbalance to the richness of the meal.

                                Baked beans & franks & beans has been a regular menu item in my home for years.
                                 
                                A few tweaks from my "recipe"
                                 
                                Always drain the "juice" from the beans.
                                I cut up the bacon into 1/2" pieces & mix it in with the beans.
                                I add about 1/3 C of chili sauce for each can of beans.
                                1/2 C of finely chopped fresh onions.
                                I use just brown sugar,about 1/3 C per can of beans.
                                After about 15 minutes of baking I stir the beans to mix the melted brown sugar into the beans.
                                I bake the beans until they are no longer "soupy"
                                 
                                When I have fransk & beans I always serve corn.  Why?  because that's what my mom always served!!
