At home, always. In a restaurant it will depend on the quality of the skin. But I always expect to enjoy the whole potato not just the innards!

How about doing it like Sundancer does it, then slice open the tops, dig out the innards, mix with butter, SC, cheese, ham AND the now cooked onions...plop it all back inside the skin, back in the oven for 15 min for a real nice twice baked!

I love chili potato skins, but prefer my tater to have sour cream, butter, and chives....

I like to eat all the inside and save the peels. Then I coat them in butter, salt & pepper and take to work for lunch the next day. A few seconds in the microwave melts the butter. Sometimes I will sprinle with green onions and/or bacon bits.

The skins and a piece of fresh fruit make a super lunch... and cheap, too.

You just shut up.....I'm kidding....that's what I do. Actually, at home back in VA I just trumped a chunk of butter on that skin...my Dad loved me for it!

I love the skin!!! I wash the skin very well and then coat liberally with olive oil. Sea salt, coarse ground pepper liberally as well. 375 degree oven for 45 minutes or an hour. Wonderfully crunchy skin with a creamy inside. I like to eat the skin with the inside so that it doesn't taste too salty.

I can't believe I missed this thread. Of course I eat the skins. I do oil and salt the skins before baking, though.

Another vote for skin. I just wash them, then bake them at 375 degrees for around 45 minutes (longer if they're big taters). The skin comes out crispy and delicious. They only need a touch of butter and S&P, which is usually pooled on the plate, just waiting.

One thing that drives me up a wall is when I get a baked potato that's been rolled up in that rock salt stuff. When I take a bite of the skin, all I can taste is the salt, and I'm cutting down since I found that my blood pressure is high.

Since no one else is going off topic, allow me: doesn't it drive you crackers when you buy something low fat and check the label for (or taste, to the detriment of everything else) sodium?

I have a baked potatoe about every friday of the year, along with a grilled steak. By the time I get to the skin, it has soaked up some of the juices from the steak, and some of the butter put inside... Yumm!

For those of us who enjoy the earthy flavor in the skin, Beware. In a restayrant dont eat it if it is foil wrapped! Working in different pllaces I learned one important fact. If they are wrapped in foil they may not be washed. I have found mud in thae skin before.
Baked with oil and S&P you see what you eat.

Britt, you're right. I used to work in the kitchen of Ryan's Steakhouse and was often in charge of wrapping bakers for the day:
Step 1 -- dump a 40 lb. box into the utility sink and fill up with tap water.
Step 2 -- drain the sink and start wrapping each potato in foil.

I'd have to wrap for hours and couldn't stop to clean a spud more thoroughly than that. Sometimes there were some dirty ones, but does a 500-degree oven kill everything anyway? I don't know. I often ate potatoes at work and of course would eat the skin, but only if I washed the skin myself. Coincidentally, my friend worked in the kitchen at a smaller restaurant in town, known for their spuds, and he always complained about being the scrubber (he'd scrub boxes of spuds at the sink for hours)! And their potatoes were great.

Some great ideas for cooking the skins, thanks yall! I usually just do butter and s&p. I want to try some of the other ways suggested here.

My first skin served by itself was at TGIF back in the 70s. Bacon, cheese, sour cream, and green onions topping the skins. They were great!
