I can't believe nobody mentioned this method so here goes. My dad used to wrap the potatoes individually in tin foil and cook them right on top of the charcoal briquets when he was cooking a roast outside. He would arrange the coals around the potatoes and rotate them every ten minutes. To this day I've never had better baked potatoes. The skin would be charred and crunchy the likes of which you can't duplicate in an oven.

Well then Desertdog, I guess we're both weird.
Eating them at restaurants now-a-days is a disappointment. No one bakes them anymore. They all get nuked and therefore don't develop that nice crisp skin. I usually keep them dry. That's about the healthiest way to eat them. There is usually some kind of juice or gravy from whatever else is on the plate.

I eat it all also but instead of eating from the inside out, I split it in half apply my butter and sour cream and cut it just like I do my steak, in bite size pieces eating both parts at once. I also like my skins lightly buttered and salted.

I love them that way also. It not only makes the skin much tastier but adds a little extra push to the tooth when you bite down on it. Just a tad bit more crunch.

The method I use is rub the potato with lard then roll it in coarse kosher salt or better yet coarse red hawaiian salt then cracked pepper. Do not poke holes. Place in oven at 500 degrees for 10 minutes then turn down to 400 until done. Serve with clarified butter for potato itself. Then eat skins with cold hard butter ......Russ

Agreed!!!

Only thing more disappointing than a steamed potato is steamed potato skin.

I roughly follow the Joy of Cooking technique: lightly butter the skin and don't poke steam holes until half-way through cooking. Gives a fluffy flesh and crispy skin.

DD - when we were kids we always ate the skin, until the pediatrician once said something to my Sister about the "potato skins" (wax) in her ears. She refused to eat potato skins for several years afterward.


Same here, except I use peanut oil.

1- Very lightly oil the spud
2- Salt the outside well with kosher salt
3- Into a 400 degree oven for 30 minutes
4- Poke several holes in the skin
5- let it bake for another 30 minutes or so
6- ENJOY, and of course I eat the skin!

I always eat the skin.

I never peel potatoes, unless maybe I'm mashing them ... but even then I leave some for a little flavor.

My mother has some aversion to the skin, she peels them all, no matter what. Another thing she does is pull the strings off celery.

I'm under the impression that the skin and the strings are good fiber ... Isn't fiber a terrible thing to waste.

This is very true. I took a girl out on a date once about 150 years ago, and she absolutely freaked out when I ate my baked potato with skin.She claimed her cousin worked at the restaurant, and they didnt wash their potatoes. It really was quite humiliating at the time, now I wouldnt give a rats behind.

So, to answer the question, at home I eat the skin,the best part IMO, at restaurants, well sometimes.

People are known to eat dirt and clay without harmful effects. I figure after baking for an hour there is nothing that will harm you.

I think the skin's one of the best parts - my dad enjoys it too, and jokingly refers to it as having "a nut-like flavor"..

I love the skin-the best potatoe is from (Outback Steak house)-there skin is covered in salt-I have tried several times to duplicate-but can not get salt to stay attached to the spud.

Yes, most of the nutrition is in the skin, and I eat the whole thing. Hoping, of course, that the skin has been carefully scrubbed!

Rub the potato clean under cool running water. Dry it. Rub it with kosher salt, wrap in foil and put it on the grill. The skin comes out perfectly. I am the only one in the house who eats the potato skin. Doesn't bother me a bit.

Sunday dinner was meatloaf and oven-baked potatoes. Tonight is tenderloin steaks and big baked potatoes done on the grill. I just wash the potatoes and nuke them for about 6 minutes. This cooks the insides so I can easily finish them on the grill, crisping the skins as I cook the steaks. Scallions, sour cream and pepper along with a little butter make it nice!

My husband and I love twice baked potatoes. Rub potato with solid Crisco and bake until done. Split open and spoon out the meat. Mix (similar to mashed potatoes, but not as fine) with milk,cheddar cheese, green onions S&P. Stuff back in the shells and grate cheese over the top. Return to the oven until cheese melts. Eat the whole thing.

I like to eat the skins on baked potatoes but don't eat them in restaurants. When I bake them at home, I always throw in a couple extra potatoes to make twice-baked ones for another meal.

Yeah, I like skin.
When it comes to chicken, I like breasts and thighs.
As for lobster, I like the tail.
Leg of lamb, another fav.
Nothin' wrong with a little smoked butt once in awhile.

Yes, I hate that, too. I even call ahead to see if they do that. They really should be able to cook a food without ruining it for one part of the population. And yes I hate that too when you go to buy a healthier version of something (salad dressing, I am looking at you!!!) and they jacked up the salt. Jerks.

A potato-related rant. I hate when you go to a restaurant (Perkins, I am looking at you!) and the menu says they have BAKED potatoes & they bring it to you & not only is it MICROWAVED, it's not even cooked all the way through. I made the kid take it back & told him I wanted it baked. My friends were embarrassed, but if you're going to advertise BAKED potatoes, then for Pete's sake, BAKE them. 400 degrees, 1 hour, it's not rocket science.

I love the skins,. I used to work at Wendy's & still go there for a potato every now & then. I like to put sour cream & butter (unsalted!) in the potato, then mix together with my fork & eat the insides, then i take the rest of the sour cream & a little more butter & then eat the skin by picking it up. Love potatoes. LOVE 'EM!

Wash the taters. Slice them up about 1/2 inch thick. Salt them with Lowerys.

Deep fry. Use a little cheese or Sour cream to dip in.
