      BBQ in NOLA?? Why?? Eat New Orleans food when down there! Go have breakfast at Brennan's, have an oyster 'po boy at Mother's, (or even better, get a debris), grab a coffee at Cafe du Monde. New Orleans is NOT a BBQ city. It's all about NOLA food and that's a GOOD thing.

            Been to NOLA numerous times but never heard of a "Debris". What is it?

            As you probably know, BBQ Shrimp isn't actually BBQ'ed. So, while it's called BBQ Shrimp, it's not prepared in the traditional BBQ method; therefore, it's a misnomer to call it BBQ Shrimp, but what ever you call it, dat stuff be damn good, I Guar-on-tee! I get my fix at Pascal's Manele, a damn good spot, you bettcha!

            New Orleans BBQ Shrimp
            Recipe from New New Orleans Cooking by Emeril Lagasse with Jessie Tirsch, published by William Morrow, 1993
            3 pounds large Gulf shrimp, in their shells
            2 tablespoons Creole seasoning, recipe follows
            Cracked black pepper
            2 tablespoons olive oil
            1/4 cup chopped onions
            2 tablespoons minced garlic
            3 bay leaves
            3 lemons, peeled and sectioned
            2 cups water
            1/2 cup Worcestershire sauce
            1/4 cup dry white wine
            1/4 teaspoon salt
            2 cups heavy cream
            2 tablespoons butter
            Traditional southern Biscuits, recipe follows
            1 tablespoon chopped chives
            Peel the shrimp, leaving only their tails attached. Reserve the shells and set aside. Sprinkle the shrimp with 1 tablespoon Creole seasoning and fresh cracked black pepper. Use you hands to coat the shrimp with the seasonings. Refrigerate the shrimp while you make the sauce base.
            Heat 1 tablespoon of the oil in a large pot over high heat. When the oil is hot, add the onions and garlic and saute for 1 minute. Add the reserved shrimp shells, the remaining Creole seasoning, the bay leaves, lemons, water, Worcestershire, wine, salt, and black pepper. Stir well and bring to a boil. Reduce the heat and simmer for 30 minutes. Remove from the heat, allow to cool for about 15 minutes. Strain into a small saucepan. There should be about 1 1/2 cups. Place over high heat, bring to a boil, and cook until thick, syrupy, and dark brown, for about 15 minutes. Makes about 4 to 5 tablespoons of barbecue sauce base. Heat the remaining 1 tablespoon of oil in a large skillet over high heat. When the oil is hot, add the seasoned shrimp and saute them, occasionally shaking the skillet, for 2 minutes. Add the cream and all of the barbecue base. Stir and simmer for 3 minutes. Remove the shrimp to a warm platter with tongs and whisk the butter into the sauce. Remove from the heat. Mound the shrimp in the center of a platter. Spoon the sauce over the shrimp and around the plate. Arrange the biscuits around the shrimp. Garnish with chopped chives.
            Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):
            2 1/2 tablespoons paprika
            2 tablespoons salt
            2 tablespoons garlic powder
            1 tablespoon black pepper
            1 tablespoon onion powder
            1 tablespoon cayenne pepper
            1 tablespoon dried oregano
            1 tablespoon dried thyme
            Combine all ingredients thoroughly.
            Yield: 2/3 cup

                A "debris" is a NOLA specialty. And if you get a "John G. with Debris" it's even MORE special. Basically a "debris" is just the little shavings that have fallen from the slicer.......could be a mixture of pork, beef or chicken, all mixed together and served with NOLA BBQ sauce on a fresh baguette. I know it sounds crazy, but in New Orleans it works....along with the oyster 'po boy, the shrimp etouffee, the oysters.....don't get me started on NOLA food! Probably my first choice for GREAT food in the USA.

                  Despite what some "experts" are telling you,you can get some real good BBQ at "The Joint" a friendly spot in the lower Bywater @ 801 Poland Ave. (504)949-3232.They're open for lunch and dinner Th-Monday.Call for the hours.Enjoy

                    Rick-Another spot to try if you need to fill the 'Q taste is Corky's at 4243 Veterans Memorial Blvd. in Metaire (504) 887-5000.They're part of the mini-chain out of Memphis.It's about a 20 minute drive from the Quarter.Take I-10 to the Causeway exit.Take Causeway to the Veterans exit and go West (upriver).Dry ribs are a fave but everything is at least decent.Chow

                      I find that the farther away from Memphis a Corky's chain is, the less reliable, right down to the original location being, by far, the best one.

                          I'll toss out Hillbilly BBQ in River Ridge - a lot closer to the airport than downtown.

                          Pascal Manale is the original BBQ shrimp. For a recipe, I use the one that is the Plantation cookbook. Simple and delicious. Simply Delicious!

                            +1 for Hillbilly's BBQ
                            +1 for Voodoo BBQ with a table full of sauce choices. The greens at Voodoo BBQ are fantastic! Very well seasoned and tasty. I was not use to greens at a BBQ joint but, my friend who frequents the place insisted. Glad he did. Get the greens!

                                Harbor seafood  in Kenner is a great local place with a seafood market next door. Very reasonable prices. My mom was in the hospital in Kenner for a week. I must have ate at Harbor 5 times. It was that good. I still return there when I go back to NOLA. I can recommend Raw oysters, Gumbo, Fried seafood, Blackened seafood, Po Boy's. Maybe the best boiled mushrooms I have ever had as a side.
