Barracuda! How to cook?

A fisherman gave us a barracuda that he just caught tonight. I've never cooked one of these before. Any suggestions? I like to taste my fish so I like simple preparations, nothing breaded or deep fried.

Use any recipe as you would for Ono. My favorite way is on a hot charcoal fire, some salt pepper and lemon while it's cooking and don't overdo it. Aloha from Kona.

Some care should be taken as they have been known to carry toxins. "Barracuda are good table fare, but the larger of the species are know to harbor Ciguatera poisoning from eating reef fish, so most barracuda kept for the table are under 30 inches in length. A note on Ciguatera Poisoning - Ciguatera is a foodborne illness caused by eating tropical and sub tropical fin fish that have been contaminated by dinoflagellates through their consumption of certain algaes, or their consumption of other fish that eat those algaes." A reader from Hawaii writes: "To thoroughly cook barracuda, place such relatively inexperienced fish in an overly heated skillet with two tablespoons of olive oil (Extra Extra Virgin Olive Oil to please the right wing, please), pepper with repetitive sound bites albeit also with a dash of moxie and turn once the fish thoroughly resembles venison -- say in a headlight or two. Wait four more years, er...minutes and serve with appropriate dressing." COSTS: Fish = $ 12.50; Dressing = $ 150,000; Taste of Victory = Priceless.
