For websearchs try looking for recipes for barbacoa. Traditionally I believe the heads are wrapped in damp burlap and buried packed in coals overnight, meat used generally in tacos. Robb Walsh covers this in either Legends of Texas BBQ, or Tex-Mex, don't recall which, but it sounded good to me. If I recall I think he offers more conventional cooking techniques as well.
