My local Harris Teeter had beef ribs on sale and I was in a mood to fire up the grill yeterday. After a little trimming I rubbed the ribs with olive oil and Cavanders seasoning. After about 2 hours on the grill with some hickory chips I put on little Scott's BBQ sauce. The finished product. I have had mixed results with beef ribs but I thought these turned out very good.

Those Ribs look great ! I haven't enjoyed Beef Ribs since our last Texas Trip. I think I need to do some at home !!

I just wanted to try it. It's not the type of sauce we are used to in Texas but, as a Texan who loves Texas BBQ, I very rarely ever use sauce anyway. Some of the very popular Central Texas BBQ joints offer a light, (tasteless) vinegary sauce but, I don't like it and never use it myself.

I hope you like it but my guess is you won't. Scott's is a VERY traditional Eastern North Carolina vinegar sauce. It's 99% vinegar with a little cayenne mixed in. Don't forget to shake it up or it will be all vinegar. In fact as I remember it's pretty close to those Texas sauces you describe.... maybe with a little more spice. I like it on pulled pork and it would probably make a good pork rib mop sauce. It is cheap though as compared to most BBQ sauces.

"Cheap" because there is nothing but vinegar in it plus a "few" spices. I prefer to make my own mop consisting of: Cider Vinegar, Cayenne Pepper, Cumin, Brown Sugar, Dry Hot Mustard (preferably Coleman's,) Fresh Ground Black Pepper, a little Salt, and Liquid Smoke. This ia a great mop for all smoked meats because the vinegar helps the smoke adhere to the meat. JMHO David O. p.s. Great pictures. Those sure do look great!!

After having spent the last five weeks in the Cornwall area of England I was soooo glad to eat something that did not include entrails or blood of any kind. Those ribs are truely awsome looking. Going to have to make a Randall's run and do some of my own.

Those look great! I've given up trying to do beef ribs at home. Although they look good pre-grilling they're always all fat when I bite into them. Any tips for buying meaty ribs?

Mar, unless you can find a butcher that'll cut you some meaty ribs the only guaranteed way is to buy a standing rib roast and have the ribs cut (or cut them yourself) as you wish. Since the ribs are attached to a pricey piece of beef a lot of markets look to maximize profit and leave barely enough meat on the bones to be able to sell them as ribs. Brad

It is getting hard to find a good meaty rib. They are cutting the rib meat down to the bone and even between the ribs to get all the meat for rib-eye steak steaks. You can only get $3.49 max. for short ribs, which are basically beefy ribs. You can get at least $4.99 for a rib-eye. mark
