Hey, $8.88/lb is really good price! Tenderloin around here (PA) is mostly in the 12-15 range, except when they have a special. I got a whole tenderloin just before Christmas for $5.99/lb and cut it up and froze part. Got a "slice" today for $7.99/lb that was coming up on sell-by date (Feb 4), so i might make a mini beef wellington tonight

First, that is a good looking steak and I would eat it. .......But, I question the the name or cut as it was labled. Look close at the cut, the small round shaped section with the strip of fat almost making a full circle, that is the small end of the tenderlion or Filet. ........The name is misleading to make most people think they are getting a tenderlion cut of steak. You are not and this cut is not compariable to the more expensive tenderlion/filet cuts ($17.17/lb). .......So the question is: .....Is this cut over priced? .....maybe -- maybe not...............Are you getting the same cut as the $17.17/lb tenderlion filets? .......definitely not!......

A full, untrimmed slice of beef tenderloin from the butt end can contain several muscles: psoas major psoas minor iliacus sartorius obliquus abdominus internus The most expensive cuts will trim everything away except for the psoas major, but the others are still part of the tenderloin.

Stopped in at my local butchers today-Karls Country market, and whole tenderloins are 5.99lb.They will trim them, fillet them, whatever you want.At about a 3 lb average, I will probably have one filleted and the other trimmed but kept whole.I have had his tenderloin before, and they are wonderful.

Cuts of Beef: Notice the tenderloin steak in the lower right, it is one single piece of muscle and small tail clip. The Filet Mignon should be the same but without the small tail clip. Section of the Beef:

His reference is to the primal tenderloin, and a slice through the whole primal cut prior to it being trimmed would include all of those muscles. They would certainly be trimmed away during the process of preparing a tenderloin for retail sale, but they are a part of the primal cut.

John's picture above shows a cut with more than one muscle group. The tenderloin muscle is a small part of the cut (<40%). The label clear states it is a tenderloin steak. It is not! It is a top loin steak or boneless trimmed porterhouse steak. Which are also cut from the muscle sections listed by MiamiDon and normally called the (primal) Loin or short loin section.

I was responding to what you said about Miami Don's post, not about the so-called tenderloin steak pictured in the original message. A slice of the entire tenderloin must include all of the muscles. But that slice isn't a tenderloin steak.
