Beef stroganoff question

How essential is the nutmeg? I'm not a big fan. I used 1/4 teaspoon to 2 lbs meat/1lb mushrooms, but even that is too much. Do folks here swear by it, or take it/leave it, or never heard of using it in stroganoff? My mom used paprika, no nutmeg. But she was a mom, she could do what she wanted.

I used to make beef stroganoff quite often. I never have put nutmeg in it and have never seen a recipe calling for it. My stroganoff was considered really good so guess you can forget about nutmeg!

I love beef stroganoff - have made it many times - have never put nutmeg in it. Now, Swedish Meatballs often have nutmeg in the recipe and it's a good thing, too.

I have also made it often and never put nutmeg in. When I use nutmeg I grate it myself. It's much better than the preground nutmeg you can buy.

I never used nutmeg in my Stroganoff. I usually use thyme, rosemary, pepper, salt, garlic, onions, mushrooms, chuck steak, Worcestershire, sauce, basalmic vinegar or red wine, and sour cream. I use nutmeg in Bechamel sauce or in butter sauce for gnocci. Fresh ground if possible. David O.

Well there you have it. But if you google "beef stroganoff", the very first recipe has nutmeg. And a couple other first page recipes are variations of that one. And that one was from "Elise", who may be our Elise T, but I don't know that for certain, there are many Elises who are into good food. It came out pretty decent; I wouldn't push it away, that's for sure. It calls for 1/8 t nutmeg and 1/2 t tarragon per pound of thinly sliced top sirloin, half pound of crimini mushrooms, 1/3 cup shallots, 1 C sour cream plus salt and pepper to taste. Next time I'll toss the nutmeg and add some paprika.

I don't use nutmeg in my stroganoff. The only savory dishes I use nutmeg in are: swedish meat dishes(meatballs, etc) & in any kind of cooked spinach-nutmeg is a must in creamed spinach. Also, grate a whole nutmeg. You can get a cute little nutmeg grater with a lid that holds the whole nutmegs. Ground nutmeg in a can or jar is not the same thing, you really can notice the difference.

I'm not a big fan either, and wouldn't use it. Replace it with double the amount of cayenne! Go Cajuns!!!

No Nutmeg for me, as a kicker to the sauce I add a couple of tablespoons of Poupon mustard, and 3/4 cup of Parmesean cheese.

Just so everyone understands, it's not like the nutmeg killed it; it was still very good. It would have been more to my taste without the nutmeg, but it was still good.

Russian recipe, I don't think it asks for nutmeg. Russian recipes call for sour cream or cream of some sort. Swedish meatballs, yes, I always put nutmeg in that. Sour cream, onions, mushrooms, tomato paste (I put a squirt or two of worcestershire). I havent made stroganoff in a while........

I've never heard of putting nutmeg in beef Stroganoff. I do keep a jar of whole numeg in the refrigerator and mostly use it in making quiche and fettucine Alfredo, some baking recipes, oh, and over egg nog at Christmas.
