 Beer Steamed Dogs TRY!

Growing up in Lancaster NY, Near Buffalo, it was a treat to go to go to Lum's to enjoy beer steamed hot dogs.

Over the years, I have been tinkering around with various ways to steam them and I have come up with the ultimate way to enjoy them steamed in beer.


I use a Brinkman smoker.
5 lbs of Sahlen's Hotdogs (regional here try to get them if you can).
A 6 pack of Newcastle Brown Ale (it's English and leaves a nice caramelized coating on the dogs).

In your lowest level of your smoker you want your coals to be well beyond ashed over, you want your coals to be 1/2 spent.

Make sure that you install your drip pan in the top 3rd level and let it heat up whilst your coals are dying.

After your coals are 1/2 way gone get your grill ready to place on top. It's important to do this away from the smoker and add the grill and dogs lastly so they don't burn and stick to the grill.

Okay pour 4 bottles of the Newcastle Brown Ale into the drip pan and place your dogs on the grill on top. Quickly cover your smoker. Then you can relax for about an hour and a half. It's advised that you drink your favorite domestic or imported beer while you wait.

After the 1 + 1/2 hours you want to lift the lid of your smoker and quickly roll your dogs 180. at this time you will add your last 2 bottles of Newcastle to the drip pan. You'll notice that the dogs are going to be covered in a very sweet and sticky coating. Lick your fingers and you'll see.

It will take about another 45 minutes for the dogs to finish, depending on weather conditions and wind.

The final result will be a sweet dog permeated and coated with a caramel tasting flavor. Be warned! You will eat more than a few since it's such a treat! Try your first one off the bun... then you might just find that you enjoy them the most that way. Or you can use condiments, although this method of preparation actually requires none.

    If you enjoy this, I'll tempt you with beer / spices marinated porkloin done with mesquite chips. (an 8 hour project).

      I did tests with cheap beer and expensive beer, and the results were about the same. I'd drink that Newcastle! Steam em in Miller!

          OOOOOH! OOOOH!

          I bet you could probably skim off some Newcaste when you do the second add of it to the above method... A couple of Vidalias and a few dollops of butter with that Newcastle (condensed) sautéd would surly sweeten them up even more than just plain ol' butter...

            I had a friend who owned a Lum's Restaurant in Melbourne, Florida. I remember adding beer to the hot dogs all the time. Don't remember any special brand, was draught I do remember that because it was poured into the pan with a beer pitcher. Hmmmmm, I remember the slaw dogs as my favorite, but the kraut dogs with mustard second.

            I also remember, a friend of mine from Melbourne coming to visit me a few years ago from Tennessee where he lives now, and I took him to an A&W Rootbeer place in Staten Island. Haven't been to SI for a couple of years, wonder if it is still there?

            I came here because an old girl friend of mine from Miami and I were talking yesterday about old times, and the name of Ollies Trollies came up, Ollies was from Miami area. Also, Wolfie's Restaurant in Cocoa Beach, and Miami, were also in Long Island, but closed by the time I moved here (middle 90's) Was a lum's in Roosevelt Field, same decor, but served Chinese food, hmmmm.

              Hey, I did a search on A & W Root Beer, and found the website,http://www.awrestaurants.com/, and then eventually the Hylan Blvd. Address for A & W still open, plus one in NJ and Brooklyn. Meet you there on the Fourth of July! Better than Nathan's to me.

                  I see what you mean by "eventually". There are much better ways to set up a Store Locator than the way A & W did it.

                  Anyway, I used to go to the one on Staten Island quite a bit in the early 70's (on my way back to Brooklyn after hitting the beach). Glad to hear it's still there.

                  And if there's an A & W on Rt 1 in Edison NJ I've never seen it although I must have passed it a hundred times now that I live in NJ. I'll have to look for it next time and stop in for old time's sake.
