My late mom's Jewish pot roast chicken. After frying a couple of heaping tablespoons of chopped garlic and a large chopped "Spanish" onion in a dutch oven, she added a (Kosher) cut up chicken sprinkled with salt and pepper and plenty of Hungarian paprika,
and a couple of sliced carrots.
She then stirred and fried (sauteed) the chicken until slightly browned. And then, the secret ingredient. A cup of, ketchup!
Add nothing more! Give it a good stir and put the (covered) pot in a 300 degree pre-heated oven for two hours or, cook low on the stove top.
Voila! You won't believe how much gravy was made. And the chicken, ohh, that chicken! And, the incredible smell that filled the house. Serve with rice. Fantastic!
