Beware Chinese frozen cod!

It is loaded with TSP and shrinks to about half size when cooked. I am a big fan of the IQF (indiv quick frozen) chicken brests, because they are so handy to have in the freezer. You can cook one and put the rest back in the freezer. They are not as good as fresh, but do make a good last minuite chix parm. When I saw the cod in bags next to and looking like the chicken, I passed because it was expensive, but the next week it was 2 for 1, so I bought it. It is not bad, but it shrinks so much it becomes expensive. I AM a fan of the "FAS" (frozen at sea) haddock that Price Chopper has been selling at $3.99/lb this winter. They sell it in the fresh case on ice, but it usually doesn't thaw before it is sold.

TSP = Trisodium Phosphate. A preservative which also causes the seafood to absorb water, thus the shrinkage encountered when cooking. Prevalent in frozen scallops also. That's why you should always insist on "dry" scallops. Best to buy your fish fresh (if you can). Some parts of the country do not have such, but we in New England are blessed with the best in the world. Enough from me, already. Merry Christmas to All!
