Why do you think Bill Knapp's had more of a senior citizen clientele than diversity being a family restaurant. In the 1970s and 1980s they had good food but in the end the quality was not so good because they stopped doing a lot of things at their commissaries.

    They catered to senior citizens, is why. Their dinner specials started at 3pm and ended at 6pm.

      Bill's originally knew their Target Market-Audience.
      Over time, their successful market became self-apparent to them, and to their credit ... they kept on it.
      Restaurants can not be all things to all people.
       
      When Jamie Brown became CEO, certain folks (in particular an outside consultant) convinced her to "update" Knapp's to be more hip ... more "diversity" as you put it.  That was exactly the move that killed them. 
      They were not successful in becoming hip ... and in the process of losing the "brand" they already owned ...  they alienated their primary customer base.
      Things went from bad to worse financially ... they stopped the commissary model of food production in an effort to cut costs.  It was a spiral.  The very unfortunate demise of a restaurant with delicious food that I really liked eating at.

        It was always the economy version of Stouffer's.  A place where grown kids take their moms, not a place where moms take their kids.  I remember going there but nothing about it stands out in my mind - no signature dishes like HoJo's.  The best description is nondescript.
         
        And, yes, they fell into the same trap a lot of businesses do: The customer they don't have became more important than the customers they do have.  Let's call it the Newt Syndrome: A married guy ignoring his wife so he can chase other women.  Once he catches one, he ignores her to chase someone else.  One more thing really screwed up about US business: Attracting customers is a much higher priority than satisfying customers.
