Bill's Hot Dog Stand

Does anyone have the recipe for the hot & spicy hot dog sauce used at Bill's Hot Dog Stands in Washington, NC???

    Wish I knew that secret. Bill's has been offered franchises and everything else in the world and turned it down. I do know one thing, they fry their dogs in lard. I live about 80 miles away and go down there to visit friends. Usually I get a dozen dogs all the way, bring them back and freeze them.

    I have the recipe that someone had given me but I haven't tried it yet. I just started my own hot dog cart and was looking for different chili recipes. Someone that frequents the place gave it to me. I have heard all about it, but I have never been there. Here is what I was given, a lot of people think there is beans in it but it is flour, from what I was told and it stays lumpy. Maybe you can smooth it out, let me know how it turns out.

    2 cups of water
    1 onion
    4 tablespoons of flour
    1/2 tsp of texas pete
    1/2 tsp of tabasco sauce
    dash of red pepper
    1/2 tsp black pepper
    1/4 tsp chili powder
    1/4 tsp white pepper
    1/4 tsp paprika
    3/4 tsp dry mustard
    1/2 tsp sugar
    1/2 tsp salt
    Cut up onion,add water,bring to a boil and add all ingredients,except flour. Cook 5 mins and add flour

    I can't even find a listing for a Bill's, either here, or at Holly Eats.

    This is all that was on the recipe that I was given. Bill's is a very famous restaurant in Washington,NC, as I said I have never eaten there or tried the recipe, but I have heard nothing but good things about the place. Sorry, but I cant speak from experience, just hearsay.

    Actually the title of the recipe is "Hot Dog Sauce" from what I read above, which can be just about anything. Chili sauce is pretty much guaranteed to have some beef in it. Bill's is not in my neck of the woods, so I've never seen their sauce.

    I grew up near Washington. My is from that area. We would stop at Bill's whenever we were near. I don't think it should be classified as a chili, it's more of a mustard. Great stuff though. I now live in central Kentucky and only get a Bill's fix every couple of years.

    What's the difference (flavor) between Texas Pete Sauce and Tabasco Sauce, I don't keep these on hand, I prefer to get my heat in recipes with ground cayenne pepper

    Found this recipe and tried it out.  We live 8 blocks from Bill's, and we love them but decided to pursue a healthier version.  
     
    We doubled the Texas Pete, Tabasco sauce, and dried mustard.  We also substituted 1 teaspoon prepared horseradish for the white and black pepper (which my wife doesn't like).  Got to say it is mighty darn close to the original.  Tip: sift the flour into the pot and stir it in so it doesn't clump.  I could have sworn there were navy beans in there.
     
    We boil our hot dogs first and then grill them to remove all the grease.  I don't think frying in lard does that.  We use wheat buns as well; sometimes I make them from scratch.  And we use a good quality hot dog.  The company in Greenville that manufactured Bill's hot dogs burned down a year or so ago, so you could argue that they're not the same as they used to be.  Odds are the new ones contain 'variety' meats, nitrates, MSG, and corn syrup.  Variety, of course, means tails, beaks, and other scraps left over when all the good parts are gone.

    Texas Pete was developed in 1929 in North Carolina as a Louisiana style hot sauce.  It's made with Cayenne Peppers, Vinegar, Salt, Xanthan Gum and is relatively mild.  Tobasco Sauce is made (since 1868 in Louisiana) from a different species of pepper, Capsicum frutescens.  It's aged for up to 3 years and is MUCH hotter than TP.  I would get a small bottle of each and use them rather than ground cayenne.
     
    And here are the ingredients to the NC fave Texas Pete Chili Sauce for hot dogs and hamburgers.
    Water, Soy Grits, Tomato Paste, Spices, Natural Flavor, Sugar, Salt Distilled Vinegar, Caramel Color, Hydrolyzed Vegetable Protein (Salt, Caramel Color, Partially Hydrogenated Soybean Oil), Onion Powder, Xanthan Gum, Garlic Powder, Soy Lecithin.  No meat.

    I've not seen TX Pete's Chili Sauce in the stores. I'll have to look closer.

    Added a ground-up Heb Nat'l dog to give it some meat and small bit of cumin while it was simmering.  Beasted on a few Nathan's with onion, mustard and the sauce. Thumbs up from me and my boy!

    It was a fine day when I discovered Nathan's Hebrew kosher dogs. Actually tasted like meat. They try to hide them at my grocery. I had to set my sights higher....literally!

    Not sure what you're getting at 'mim'.  I had dogs from Heb Nat'l and Nathan's in the frig.  I used a technique I read on this very forum to grind up a dog in a food processor and use it instead of ground beef in a hot dog 'chili' and then served it up on a NC Nathan's. Simply telling you how I dressed up this sauce. It was a fine day.

    Sorry about the confusion, Fug and I hope I didn't offend. I was just saying that I was very pleased when I discovered kosher dogs at the grocery because they tasted so much better to me, than say, Oscar Meyer's, ect. I may be getting the kosher brands'names wrong because I do not buy hot dogs often. Your technique of using them in hot dog sauce sounds great. I've been looking for ways to eat them besides 'straight'. I'd love to hear of any other suggestions any one may know of. Thanks for your contribution. Hope we're 'OK'.
