Biscuits & Gravy for Dinner

Started a few potatoes in some bacon grease.





Wife fried up some hot sausage and set it aside








She then added two tablespoons of cooking oil and flour to the pan, stirred constantly until browned.








In the meantime the potatoes are doing nicely, time to add a little onion.








Wife added two cups of milk and the sausage back to the pan, stirred until thickened.





Time to add this stuff to a plate





Dinner is ready.

    Just Awesome, John. I am a HUGE B&G fan from way back when I was livin in Branson, MO. It is still my most ordered breakfast plate when I am out. Always get it with home fries and scrambled eggs, dousing it all with Louisiana hot sauce and cracked pepper.

    My brother claims to make the best, and I must say his is very good. Maybe we can arrange a B&G cookoff sometime, eh? We'd all win!

    John just looking at your photos brings a tear to my eyes. I use to eat like that all the time but I weighed 340 with a 54in waist. Now I'm down to 258lbs a tight 42 waist and off the blood pressure pills.
    I haven't given it up all together though, I still indulge on occasion. For a Yankee I do love biscuts and gravey and had some recently at the Yourkshire Rest. in Mannasas Va. a great little spot worth visiting if your ever in the area. Their chicken fried steak was outstanding also. Chow Jim

    This forum is terrible for a dieter and your pictures sure dont help John! But please don't stop! We can at least live vicariously through your posts!
    I do still indulge occasionally on this staple southern dish but with smaller portions
    Congratulations Jim! I was quickly heading towards 300lbs (280+) a few yrs back when my younger brother had a heart attack (at 35)with portion control, exercise and cutting out some things ALMOST totally (we don't even have icecream in the house now) I got down to 220 and have been for about 2yrs now. I could probably stand to lose another 20 or so but at least the doctor isn't pestering me (as much)

    Good for you two, keep up the good work. My appetite went on vacation a couple of years ago and has not yet returned, nowadays I eat a lot less but continue to eat what I like. That's one small biscuit and a handful of potatoes, spuds are my weakness.

    John, its darn tough watching u'r great photo's of good eatin'but i'm determined to get this old body back down to 215 from 266 so i'll just drool and maybe the weight will go away.

    Good comfort food in moderation to be sure! Having bad heartburn attacks keeps my portions of this type of dish in control. Like on the commercial, you see sausage...I see tacks. I wouldn't recommend this condition as a dieting tool though.

    John, you're a gentleman and a scholar and. . . . Well, I have to agree with all of the above. A truly delightful meal, one that I try to sneak past my wife whenever I get the chance. One question: why not use the sausage drippings instead of oil? After all, it's not like this is a heart-friendly snack!

    that's how my girlfriend used to make it, she would brown a whole package of jimmy dean and wouldn't drain any of it at all.. just stirred in the flour, then the milk, then plenty of black pepper. very fast and easy, but when i make mine i do the same thing john does mostly because the sausage i use is very lean and doesn't have a lot of drippings to work with anyway.

    Thanks all,

    The Jimmy Dean does not seem to have a lot of fat, none of the drippings are disposed of. She suppliments with a couple of table spoons of oil.

    I cheat when I make my B&G-I have found a good generic packaged dry mix,make according to directions,then add my cooked sausage with the grease..My Carolina cousins tell me it is the best they ever had.Maybe their gauge for true B&G is low,but its a quick fix!!

    I wondered if the sausage might have been JD's, which really is very lean. That's kind of surprising, given that it is (or was the last time I was there) made in the same general area as Williams' and, in the past, Reelfoot sausages. Here in LA it is sometimes hard to find traditionally fatty, highly seasoned sausage, and the Cajun variety, while tasty, just doesn't do the job. Things are getting better, though: I've seen Owens' and Tennessee Pride (gasp!) in stores from time to time.

    I have a dear friend who owns a place called Maw's at the Red Barn, which is a place where individuals own their products and rent (1200) stalls to sell from..Anyway she has owned Maw's for 28 yrs. She gave me a sample of the generic mix they use for Biscuits and GRAVY, the mix comes from SYSCO, its quite good,I add Jimmy Deans and another sausage which has more fat in it,a teaspoon of Fresh Ground Black Pepper and a 1/4 tsp. of Red Pepper Flakes..Makes a great gravy for B & G..

    Mamow used to cook up smoked link sausage and make coffee gravy, which was us po folks' version of redeye gravy. It's turned cool down here; that'll work for supper tonight! Thanks!

    YUMMMMMMMMMM....RED EYE GRAVY and a big slab of COUNTRY HAM with a few biscuts...OH MY GAWD!!!

    When I lived in KY (where I was born and raised) we used only two kinds of sausage...TENNESSEE PRIDE or VALLEYDALE...Can't get the Valleydale down here in FLA, but TN PRIDE jumps into my cart every time I shop...it make GREAT GRAVY!!

    I get the packaged sausage gravy mix from my grocery store..its in the section with all the other dry gravy mixes,etc.
