Board of Health, Cart manufacturers and the rest

Haven't been on roadfood.com for sometime. I do miss it but life works that way. Ok, here we go; am in the process of working with Board of Health for permit to operate Quality Hotdog Stand by the Famous Hotdog Guys from the UK. Good stuff so far. Now, I'm having to deal with 3 compartment sinks which "must hold a pair of tongs" size wise, a sneeze guard and an incomprehensible clean/dirty water storage. Hmmmm, does anyone know exactly what capacity of water storage one needs? Here in the UK, you are inspected for disease possibilities, cleanliness, and adherence to HM Health & Hygiene Dept. requirements. Furthermore, I received an email from my cart manufacturer who informs me that a NSF certificate might be required. Ok, wasn't my cart manufacturered with NSF requirements included? More BS me thinks. Anyways, looking to set up business in very near future in my home town. I did read the guy from NJ who is selling his cart due to time factor in acquiring licence to operate and need to, well, make money. What gives? Skip
