 Boston Brown Bread

I was just reminded of this in another thread. Growing up we always ate B&M Brown Bread in a can. Was delicious sliced and toasted with cream cheese. I've tried to make it but it was a pale, overly healthy, poor imitation, and all the recipes I've seen since have looked the same (three kinds of grains, too coarse, not enough molasses flavor).

Does anyone have a recipe that actually tastes like the commercial kind?

    I've always missed store-bought brown bread too! This recipe uses several grains, but I have made it using only cornmeal and wheatflour, and it was pretty good! (Was years ago, so hope my memory doesn't fail me!)However for a really authentic Boston Brown Bread, follow the recipe and let me know if it satisfies you. (I think it's time I tried it again)!

    combine
    1 cup yellow cornmeal
    1 cup rye flour
    2 tsp baking soda
    1 tsp salt

    combine in separate bowl
    2 cups buttermilk
    3/4 cup molasses
    1 cup raisins

    add the liquid to the dry ingredients - pur batter into 2 buttered 1 lb coffee cans about 3/4 full. butter lids before closing, and tie on to keep seal tight. Steam 3 hours in 1 inch of water (place cans on trivets in bottom of heavy kettles with tight fitting lids - if you have no trivets, use balls of foil to raise the can off the bottom of the pot) Cool breads, remove lids, for easy removal remove bottom of can with tim opener and push out.

      Here you go, Real New England Boston Brown Bread

      1 cup corn meal
      1 cup whole rye flour
      1 cup whole wheat flour
      1/2 Teasspoon baking soda
      1 teaspoon baking powder
      1 teaspoon salt
      3/4 cup dark molasses
      2 cup buttermilk
      2 tablespoon melted shortening

      stir cornmeal,rye flour and whole wheat flour with a sppon to fluff them up before measuring. Lift lightly into cup w/spoon to measure. sift corneal,rye and wheeat flour w/soda,baking powder and salt 3x, add bran in sifter to the mixture. combine molasses,buttermilk and shortening. add to dry ingrediants and stir until thoroughly mixed. Spoon batter into 3 well greased molds or tin cans(2 1/2 cup capacity) filling them about 2/3 full(about 1 2/3 cups each) Cover with lids or double thickness of waxed paper tied securely in place. Steam 1 1/2 hours or untill springy when pressed and no longer sticky. cool for a few minutes, then remove bread from molds. Serve warm with butter.

      Goes great with traditional Baked Beans and hotdogs, something we have every saturday night here in Vermont.

        Can you still get B & M brown bread in a can? I used to love it when I was in college and have not seen it since. Wondering if it's till around?

          B&M Brown Bread in the can is still available. B&M is now part of B&G foods (confused yet), who are well known for their pickle and sauce products.
          I have seen this in my local stores, though it is normally more of a "winter" item.
          It is also available through several online grocers and even, believe it or not, Amazon.Com.

            I have seen it when in New England, but haven't found it in my local store here in New York.

              I used to be able to buy B&M Bown Bread in central Ohio, but the only stores that carried it were Big Bear Supermarkets, and since they shut down a couple of years ago the product is no longer available. I've requested that Kroger, Meijer and Giant Eagle, all of whom carry B&M beans, start stocking the bread, but none has.

                B&M in can w/ raisin's is available here in Rochester NY , but without raisin's is not. Just got back from Cape cod , so I stocked up on a few cans to bring home. Looking forward to a cold winter day and I will cook a Knockwurst boiled in beer and sides of sauerkraut baked beans and a Can of Brown bread!!!

                  If you're near one of the Eat 'n Park restaurants -- yes, the horrors, a chain -- their Boston Brown Bread looks and tastes like the canned stuff my grandma used to have. (They do sell it retail, too.)

                        B&M brown bread is still available (with and without rasins)in just about every supermarket and mom and pop grocrey here in Maine.
                        The B&M plant is just off I-295 in Portland, and you can tell if they're cooking beans or not when you drive by.
                        Peartree is dead-on for Saturday night supper; don't forget the 'slaw.

                          I never ate it, but My Mom does all the time. It can be purchased in any of local supermarkets in Upstate NY.

                            Thanks for the information. I don't often get to Cncinnati, though. As to other brands, I don't know of any, but that doesn't mean there are no other brands.

                              The cheapest online source can be found through the manufacturer's link at www.bgfoods.com. You must buy a minimum of 6 cans for about $3.60 each with shipping. If you buy 12 cans, the price comes down to about $2.80 per can.

                                Thats tonights dinner, Fish Cakes,Baked Beans that I just put in the oven in the old wood cook stove,cole slaw and finally Brown Bread with out the rasins. I prefer my brown bread with out rasins the other way is too much like a desert cake to me. I might make a corn bread also. Left over beans for breakfast with a piece of pan fried trout for breakfast tommorw. It just dosen't get any better. Chow Jim
