 Breadless Mealoaf Recipe?

Breadless Mealoaf Recipe? Fri, 12/26/08 2:22 PM (permalink)

Does anyone have a recipe for breadless (OK, gluten free) meatloaf? Meatloaf is one of my top comfort foods, but I don't know how to make a good one with no bread or meatloaf mix. Thanks for any help.

    I was going to suggest oats, as discussed in tara's ML thread. It seems American oats because of processing  and storage issues can contain gluten but organic and European oats (hopefully)do not.

      Couldn't you use cooked rice instead of the normal bread crumbs? (The Gluten-free Kitchen http://gfkitchen.server101.com/rice.htm says rice itself is gluten-free and they list some instant rices without any coating that might contain gluten.)

        Couldn't you use cooked rice instead of the normal bread crumbs? (The Gluten-free Kitchen http://gfkitchen.server101.com/rice.htm says rice itself is gluten-free and they list some instant rices without any coating that might contain gluten.) 
         


        how about rice flour, so it doesn't become pepperless green peppers?

          Cornmeal or hominy grits come to mind. Cheap but effective

            Meat Loaf #4 (Gluten-Free)
            1 lb. meatloaf mix (or, 1/3 lb ground pork, 1/3 lb ground veal, 1/3 pound ground beef - you can also use all ground beef)
            ½ cup prepared horseradish
            ½ - ¾ cup gluten free fresh breadcrumbs (not dried)
            1 egg, beaten
            1 medium onion, diced
            ¼ cup water
            1/3 cup chopped Italian parsley
            Mix all ingredients; shape into a loaf form, put on cookie sheet with sides
            Top with the following:
            ½ cup gluten-free chili sauce (Heinz)
            3 tablespoons Heinz ketchup
            2 tablespoons Worcestershire Sauce
            10 drops gluten-free Hot sauce (optional)
            Bake at 350 for 45 minutes. Serve with twice baked potatoes with cheese and sour cream and baby glazed carrots.

              Ingredients

              Cooking spray
              1/2 to 1 small yellow onion
              2 pounds lean ground beef
              1/2 cup rice cracker crumbs
              1 cup grated carrots
              1 egg, lightly beaten
              1 (15-ounce) can tomato sauce, divided
              2 to 3 teaspoons gluten-free yellow or Dijon mustard
              1 tablespoon gluten-free Worcestershire sauce
              Salt and pepper to taste
              2 teaspoons brown sugar

              Method

              Preheat oven to 400°F. Spray a 9-inch loaf pan with cooking spray and set aside.

              Chop half of the onion and transfer to a small bowl. If desired, thinly slice the remaining half and set aside to go over the top of the meatloaf.

              In a large bowl, combine beef, cracker or bread crumbs, chopped onions, carrots, egg, 1/4 cup of the tomato sauce, mustard, Worcestershire, salt and pepper. Transfer to prepared loaf pan. If desired, lay sliced onions over the top of the meatloaf. Combine remaining tomato sauce with brown sugar in a small bowl, then pour it over the top of the meatloaf and bake for 1 1/4 to 1 1/2 hours, or until done. Slice meatloaf and serve.0

                  I have taken to mixing a lot of shredded veggies into my meatloaf ... no need for bread.


                  I heard that.  I like barley as a mixture in mine also; along with onions, mushrooms, sauteed fresh garlic, and sun-dried tomatoes.

                    Unfortunately, barley is poison. Thanks for all the ideas. I'm going to have meatloaf one night this week, probably with greens and baked sweet potatoes. My husband is going to be sooo happy.

                      I never liked the way cooked rice looks in a meatloaf. 
                      I would use rice cracker crumbs if allowed.
                      Gluten free fresh bread crumbs as Michael wrote would be great.

                        Instant mashed potato flakes would probably work as well.

                          I am on a gluten-free diet also, as a sufferer of celiac disease. I make meatloaf with bread crumbs from my home made gluten free bread, available as a mix from  Bob's Red Mill, or Whole Foods (which I prefer). Simply make crumbs in your food processor, and toast in the oven. I use half bread crtumbs, and half tortills chip crumbs, processed the same way. The meatloaf comes out delicious, whatever recipe you use to make it.

                              I try to stay on a lowcarb eating style.  I use crushed pork rinds instead of bread crumbs in meatloaf, meatballs, etc.  I use about a 1/4 more pork rinds than bread crumbs.  The pork rinds do not add a "piggy" taste to the end result & I like the lighter texture of a meatloaf/meatball that the rinds give.

                                In order to get my husband to eat zucchini, I now grate one or two small ones in the meat mixture-along with the eggs and other vegetables, it holds up well without the bread crumbs.I also throw about a 1/4 of parmesan cheese in there which seems to help as a binder.

                                  Phismonger, I'm celiac, too. I hope going gluten free has been as great for you as it has been for me. I have a whole new life!
                                  I just got a food processor, so I think this whole thing will be easier, from chopping vegetables to making bread crumbs.

                                      My meatloaf (Last night and again for lunch today) turned out great.
                                      I used  1 1/2 lbs ground chuck mixed with one egg, some (about a cup and a half all together) onion, bell pepper and celery. These went in the processor.

                                      Topped it with tomato sauce and sprinkled that with oregano. Baked in a loaf pan. My husband says it was better than the old way.
