 Breakfast Chili

I make a large several gallon batch of breakfast chili about twice yearly and stick most in the freezer for easy reheats in serving sizes. The recipe changes slightly with each coming but the basics include starting with about 20 pounds of sweet onions, some commercial cans of no bean chili, lots of sausage, lean hamburg, and cooked bacon chopped fine (best done while still frozen), plus brown sugar, the spices of the moment (which usually includes Thai sweet and hot mae ploy sauce), etc. Then I add lots of cubed pepper jack.

The key factor is that with beans or without onions it ain't breakfast chili. That came from my Air Force aviating days where bean gas required going on 100% oxygen too often and the onions were a way around the problem. Experience suggests you'll either love it or hate it, not much in between.

    Please believe me when I say I'm not being critical. I'm not. I am, however, curious. I've never heard of breakfast chili. I often have regular Waffle House chili on hash browns, but it's not breakfast chili. How do you serve your breakfast chili?

      Thats a whole bunch of chili with 20 lbs of onions and who knows how much else. I think It should get you through the year very good.

      I gotta admit that I have enjoyed Waffle House chile for breakfast many times. It sounds to me like you like to make enough to last for you a long time.

        Not to be critical,but i had the hash browns at Waffle House "all the way" a while back, and i wasn't sure if it contained potatos or pasta at first. Not bad but kinda funky with my waffle- which sucked as usual.No Vanilla in mine please.

          Serves any old way: Side serving for hot cakes, microed in a large soup cup, maybe with an egg on top, on toast, filling for an omelet, over home fries, whatever your tastes run to.

            OK. I've had it over potatoes, but I've never heard of chili as a side for anything, or with eggs or on toast. Not that it's bad or anything. I've just never heard of it being served that way.

              First time I had chli like that was called Chili in Hell in San Francisco. It was several years ago but it was pretty good.

                  Cowfrog, the breakfast chili sounds great! I'm gonna to try a smaller batch.

                  Michael, my friends and I would always split a bowl of Benny Binion's chili at the Horseshoe to go with the ham and egg special during the World Series of Poker. Good chili goes great with eggs!

                    Cowfrog, I completely misunderstood when I first saw the title of this thread. After seeing how people ruined pizza by inventing breakfast pizza with scrambled eggs on it, I thought that you had come up with an egg based chili.
                    What you descibe doesn't seem too far removed from regular chili except for the addition of chopped bacon, sausage, and brown sugar and the asian spices. Actually, your recipe sounds quite good.

                        Not sure why you're calling it Breakfast chili but OK, sounds good to me. I make my own chili, with beans and eat it with most anything. And on a lot of different things, fries, hashbrowns, eggs, toast, spaghetti...ect.

                          Long overdue update;

                          I said earlier that I would try a smaller batch of breakfast chili. I did not use Cow's recipe. I had a bunch of hungry folks at my house early one morning so I just started cooking. 2 lbs. Jimmy Dean breakfast sausage, 1lb. bacon, Rotel tomatoes, regular canned tomatoes, tomato sauce, pickled jalapenoes, 6 corn tortillas for thickening. and some chili seasoning packets of some kind.

                          It didn't turn out bad. My guests ate it but... they were real hungry. :~)

                          I would have fixed eggs to go with the chili but there were too many folks and I was tired.

                          Eggs and chili go good together though.

                                  Though I generally run like a track star from Waffle House chili, I love great chili over an omelet, cornbread, corn chips, hashbrowns, rice, or spaghetti noodes.  Few foods are that versatile.

                                    Foodb, that's just the way I felt. And it wasn't just dinner. The late night snacks were a must also. I did have a good helper though. I could do a whole thread about my poker game menu. Hey, if you had the best food... you had the most popular poker game. :~)

                                    Hmm, well said Mellow! Looks like chili does go goes good w/ breakfast. We know of one place (WH) where you can get chili w/ your breakfast.

                                    Does anyone know of a place that serves a breakfast chili, made w/ breakfast type meats?

                                      Breakfast Chili Hash
                                      2 tablespoons extra-virgin olive oil
                                      2 large baking potatoes, poked with a fork then cooked in the microwave for 6-8 minutes on high,
                                      or until tender
                                      Salt and freshly ground black pepper
                                      1 green bell pepper, finely chopped
                                      1 red bell pepper, finely chopped
                                      1 medium size onion, finely chopped
                                      1-2 cups leftover chili
                                      2 tablespoons butter
                                      4 extra-large eggs
                                      Heat a large nonstick skillet over medium-high heat with 2 turns of the pan of olive oil,
                                      about 2 tablespoons.
                                      While the skillet heats up, chop up the cooked potatoes into bite-size chunks
                                      then add to the hot skillet and spread out in an even layer.
                                      Season them with a little salt and pepper, and let them brown for about 2 minutes without messing
                                      with them. Then give them a stir and continue to brown them for another 3-4 minutes,
                                      stirring every now and then. Add the chopped pepper and onions, stir to combine and
                                      continue to cook for 4-5 minutes or until the veggies are tender.
                                      Add the leftover chili and cook until it is heated through.
                                      While the leftover chili is heating up with the potatoes, start the eggs:
                                      Preheat another skillet over medium-high heat with 2 tablespoons of butter.
                                      Once the butter has melted and the bubbles have subsided, crack eggs into the pan,
                                      season with salt and pepper, and fry to desired doneness.
                                      Divide the chili hash between 4 serving plates and top with the fried egg.
