 Breakfast in a roaster

I am going to be making breakfast for around 80 people at a campground.
 
What do you think of filling up a big old electric roaster with eggs, sausage, hash browns/tater tots, and all the extras of cream of whatever soup, onions, some peper flakes, milk/ chicken stock etc, etc.
 
If I set this on low and let it go all night, do you think it would get done/ or turn into mush?
I plan on getting up a couple of times during the night to check and stir, but would like some input from others that have fixed something like this.
 
This will not be the only item on the menu.

    i think it would work, but i wouldnt put the potatoes in until about an hour before serving.And you dont need soup or chicken stock, just milk and seasonings...

      I think a good strata recipe might work well in an electric roaster.  It wouldnt be much different in theory from cooking a strata in the oven.

        Wouldn't you need to keep an internal temperature over 140 to avoid bad bacterial growth?

            It looks to me like you would have no problem with anyone getting sick as long as your roaster could hold at whatever temperature is the low temperature of a crock pot.

              This recipe looks pretty good. Here's what I'm thinkin'--- Put a Crockpot liner in the pot. Spray with some Pam. Add ingredients. Let it cook. Remove the entire bag with contents. Let it sit a minute then cut away the bag. THEORETICALLY-- You should have a dish that looks like a multi-layer cake. Cut in wedges and serve with a cheese sauce. Think it would work???

                I have to be honest.
                It sounds gross to me.
                I'd have to see a picture.  A thousand words isn't doing the trick.

                  It would work. Check the temp with a thermometer. Bacteria would not set in that quick and I am sure the temp would be over 140. Check it at 9 hours and adjust.

                   Crock Pot Morning Casserole 1 bag (32 oz.) frozen hash brown potatoes

                  1 lb. of bacon diced, cooked and drained or 1 lb. cooked ham, cubed

                  1 medium diced onion

                  1 green bell pepper diced

                  1 1/2 C. shredded cheddar or Monterey Jack cheese

                  1 dozen eggs

                  1 C. milk

                  1 t. salt

                  1 t. pepper (more or less to taste)

                  Place a layer of frozen potatoes on the bottom of the slow cooker, followed by a layer of bacon then onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese.

                  Beat the eggs, milk and salt and pepper together. Pour over the Crockpot mixture, cover and turn on low. Cook for 10-12 hours.

                  I guess you would times it by 15 or so...Russ
