I love breakfast, I love hash browns, and I love bacon. You too can make excellent hash browns at home with very little effort. Here are the basic ingredients. You want to shred the spuds on a knucklebuster.



Put the potatoes in boiling salted water. Let it return to a boil and cook for a minute or two. Try for a translucent look. Drain and rinse out the starch. I use this same technique to make potato pancakes. This way the potatoes do not turn gray while you are making them.



Add peppers, onions, garlic to hot oil. Salt and pepper too...



Cook for a little bit to get it nice and brown.


While that is cooking, let's discuss pork strips. This is my caramelized peppercorn, before and after. It is cooked so it is still pliable.



Breakfast is served.


Here is a bonus breakfast: Migas.  This is meal explains why I am here. I would never of heard of this dish if it wasn't for Roadfood. It is made with red and green peppers, jalapenos, onion, chorizo, crisp corn tortilla chips, cheese and eggs. I have never made this before, but it was very good. This was a winner!!



I like how my photos have a steamy vapor that I can assure you is very aromatic.  As always, I hope that you are inspired to try this for yourselves at home.

        Very Nice!  I never tried boiling the potatoes first.  They looked perfect.
         
        And any breakfast with hot peppers is a home run for me.

                    Thanks for all your nice comments. As I have written, I hope to inspire others to try their hand at cooking.

                    Baah, I give John a lot of credit for all his cooking contributions. I'll let him man the grill.

                    Mellowroast,  I wish I was anywhere south of the Mason/Dixon line, and I am really close to getting out of the frozen north.  A diner in Chatanooga would be fine with me.

                    As for the migas, this is another case of me cooking unemcumbered by the thought process. I knew the basic idea behind it, but it wasn't until after I made it that I went to look for a recipe name. Turns out that this was a very close duplication of the dish.  I have since learned that this is just as popular in Spain and Portugal, when I thought this was a Mexican specialty

                    I cooked up the chorizo, with the onions and peppers. I added he tortilla chips and they actually started to soften a little. From there, I added the eggs and cheese.

                          i'm not much of a baker and haven't ventured to do muffins - make a pretty darn decent banana bread though :)

                                Bob loves hash browns, but I could never seem to get them right.Thanks for the tip on boiling in water for a bit-I think that solved my problem!

                                  I am biting my tongue, trying to refrain from banana jokes....

                                  I'm glad that I may have helped in culinary encouragement to you all.  Truthfully, the caramelized bacon is my favorite go-to item when I make breakfast for others.  I suggest that you folks try that one too.
                                  Coming up....Eggs Benedict. I made this one back on New Years Day, but I'll give a demo soon. It is easier than it looks.

                                    When making hash browns, I find giving the raw slivers a ride in the salad spinner makes a big difference in the outcome.
