Breakfast on the way to Bethel Woods

Am heading to Bethel Woods next weekend to go to the Woodstock Museum, and would like a good place to eat breakfast on the way. My route will be from Fishkill on I-84 west to Route 17 to Monticello. Looking for something new, not the same old diner food.
BTW- The Museum is great!!!...worth a trip from anywhere....Now if I could just make it to Cleveland..Hmmmmm

Coney Island Restaurant in Middletown NY is a fav or some of us roadfooders , get directions from Coney Island Lou from highway .
Also two miles from me Exit #116 of Rt. 17 is the Quickway Diner , same old diner food but prices are good , food good and service usually good .
