    Since I have no idea where you are I'll recommend picking up a copy of Bruce Aidells sausage cookbook, a mid range meat grinder, some pork and spices. I haven't found anything better than making your own. Its easy, and you can vary fat, and spice levels to your own liking.

      I personally like Bob Evans links the best but I don't know if they're available in your part of the country.

        I dont know if you can get it where you are, but here in Oklahoma there is a brand called J.C.Potter----WONDERFUL stuff and it comes in several flavors --including one that is withou a doubt the BEST thing i ever tasted with word "Lite" on the packaging---amazingly good flavor with very little excess grease! I LOVE it! If you have ever seen me--you can tell-i dont eat a lot LITE stuff--but this is really good---their Sage flavor is good too---i use it in dressings---as in turkey day type dressing--they sell linkds too but i am partial to the bulk.

          I may not have been clear enough in my original post. I'm looking for a source for those short, plump premium breakfast sausages that you sometimes find in good diners, B&Bs or accompanying a typical "English breakfast." Maybe a smokehouse that specializes in these? No interest in making them myself. Thanks! - Rusty

            I've been making my own (I can add as much sage as I like). I also like Bob Evans (patties not links). I also really like (here it goes) morning star patties . What can I say, I like what I like.

              It sounds like what you want are Jones link sausages -- in particular, what they term their "dinner sausages," which come six to the pound instead of 12. (It's the same set of spices as their smaller links, so don't let the name fool you.) If you live in the Northeast, you should be able to find them in any supermarket.

              That sounds nice, actually, maybe I'll make a dinner breakfast tonight...

                I was buying George Jones Brand until they stopped carrying it around here. I should look around and see if I can find out what happened to it.

                  I love breakfast sausage, and prefer the patties made from bulk to links (more crusty area, and easier to cook).

                  Believe it or not, I've tried all the national brands like Jimmy Dean, Bob Evans, etc, as well as some smaller packing houses, and found that a "house" brand sold at the local Shop and Save store. It's got great flavor, and is leaner than many of the "name" brand sausages.

                  I'll also agree that making your own is the best. Takes a little time, but worth it, as I hate greasy sausage, and that way you can make it as lean as you like. Too lean, though, and it gets dry.
