Broasted Chicken Thu, 03/25/04 8:14 PM (permalink)
A recent visit to The Corner Stable in Cockeysville, MD plucked a memory chord when I saw this on the menu. I actually went there for the baby back ribs, for which they've built a local following, and decided to try their version of broasted chicken.

I hadn't seen the term 'broasted' (broiled/roasted?) anywhere for years, and was pleasantly surprised to find their rendition was just as I remembered: crisp on the outside, and extra juicy and tender on the inside.

Still looking for someplace that has 'Chicken in the Rough'.

I'm just down the road in Lutherville... where is The Corner Stable? It's not ringing a bell with me. But it sure sounds good!

Uncle Vic is right and if I am not mistaken, The Colonel started his group doing that. I believe he used a pressure cooker before someone invented a device that was specifically for that.

My brother started a restaurant in Minneapolis called "T R McCoys" one of his specialities was broasted chicken. He paid $5K for the cooker. I loved his chicken.

Besides KFC, I do not believe we have a good broaster in Knoxville,

Or you can opt for Ormond Beach, Fl for a long time favorite restaurant called Julian's...............their specialties are broasted chicken and prime rib. Both are excellent and the prices are right.

You can find it at the Palm's Crystal Bar, 1535 Pine Grove in Port Huron Michigan. Still has the original sign up on the building. Cost is 6.95.

Chicken in the Rough, last time I had that was back in 1958, and I still remember it as being very good. Was TN I think.

Last night, I ate "chicken in the rough" at Palm's Crystal Bar, Port Huron, Michigan. $6.95 each and I had to take the last of it home. I get to eat my leftovers tonight! Think ?? I found another in Ypsilanti, Michigan at Haab's??? The only other place I could find with a google search! The food and atmosphere are worth the drive.

Clue me in, somebody. I realize fried chicken is one of the worst things one can eat, from a health perspective. Is broasted any less artery clogging, or about the same?

                      Thanks.

All I know is that a place in my college town that served broasted chicken had a big sign out front that proudly said "WE SERVE THE CRISPY MOISTURIZED CHICKEN."

I could just imagine them in back, rubbing the chicken down with Noxzema...

I just enjoyed broasted chicken Saturday night at the Broadway Diner in Waterloo, IA. It was delicious. Crispy on the outside, moist and flavorful inside. I also love broasted potatoes. Yummy. I wish I had some leftovers.....

there used to be a place in Union,NJ(John Fox take note) that offered 'broasted' chicken and it was sensational!! As a kid,we used to like to sit at their counter and watch the cooks work with the noisy pressure cookers to produce some wonderful grub.....sadly,it didn't catch on and the business was somewhat short-lived, a true child roadfood memory

The last tine I had broasted chicken was at a little restaurant in Cody,Wyoming in 1974. It was so good, I remember it distinctly to this day. I have never seen it it NYC and environs.

"Chicken in the Rough" broasted chicken was started in Oklahoma City many years ago - and became a national franchise. I believe the originator was a man named Beverly. There was a Chicken in the Rough between NW 15th St and NW 16th St on May Ave in Oklahoma City that we frequented during the 1950s. Very good chicken, as I remember it.

I, too, remember the "Chicken in The Rough " slogan from many years ago. There was a restaurant on W. Broad Street in Richmond called the "Wakefield Grill." They served "chicken in the rough", which was broasted (I guess!) chicken served in a basket along with homemade type biscuits and honey, and other sides such as cole slaw, mashed potatoes, green beans, etc. Red-checkered tablecloths. White uniforms with black aprons for the wait staff. Great place. No one called it by its name, The Wakefield Grill; we just said "let's go to the chicken in the rough place."

Probably not to patients in the cardiac unit, though.

There are 85 restaurants/grocery stores/gas stations/hospitals within 30 miles of me that serve broasted chicken. Not all of them are good.

Atleast you have the mass selection there! Big city (Or Trying I should say) like mine it's so far and few in-between... And I love the properly seasoned and broasted chicken! (Used to cook it at one time also!!)... Just wish I'd see it more available...

There is a chain in the Chicago suburbs called Broosters that is very good. The only stores I know they have are in Darien on Plainfield rd and in Bolingbrook on Lily Cache/Route 53. They also have some in Florida.

Oh! this thread brings back memories! We had a restaurant called "Kentucky Maid" that was famous, or according to them, WORLD FAMOUS, for broasted chicken. As I recall it was excellent. A bronzed coating you can't seem to get from pan frying, and a moist steamy inside that was so tender. The Kentucky Maid was located in Draffenville, Kentucky.

KFC started with the Cornel selling his pressure cooker "door to door" and giving away his recipe in exchange for 5 cents or 10 cents or something like that per chicken sold.

These owners of the stores didn't get much support business/marketing wise from the Cornel and banded together to help figure out the business giving them over time far more power and control that most "owners" of chain stores.
