HI Steve, I use one in my Cafe, I offer Melts for special sandwiches. It's great for Chicken Parmesan Mozzarella melt, Pizza Hoagie melts, meatball mozzarella melt and so on. It also great for any kind of mexican food melting needs. The only problem I see doing this in a trailer is the heat, it throws off a lot of heat...................The best ......Bill

Thanks, guys! Well, it's already going to be hot in there. I don't see how this thing could add much more than what I'll be getting with a charbroiler. This may just be one of those "nice to have" items, as space - not to mention cost - is always a concern.

BillyB - Nothing! I was just being a nerd and looking at all equipment available. It's like being a kid in a candy store.

One problem I see with a salamander in a trailer is hood clearance, since the ceiling height in a trailer is only about 7 feet. In addition, you have all that extra heat being dumped into an already hot and small space, and the extra propane you will be burning for something that won't get much use. Propane is expensive, I burn $400-500 a month as is...

Thanks, Chef! I agree, and the restaurant supply guy I met with does also. You use a microwave in your rig? If so, what kind?
